Mediterranean Chickpea Salad is a vibrant and nutritious dish that combines the hearty goodness of chickpeas with the fresh flavors of the Mediterranean. Featuring a colorful mix of vegetables like tomatoes, cucumbers, and red onions, Perfect as a light main course or a refreshing side, it's a versatile and healthy option for any meal, bringing together wholesome ingredients that are rich in fiber, protein, and essential vitamins.
INGREDIENTS :
- 2 Cups of chickpeas, drained and rinsed
- 1/2 cup of tomatoes
- 1/2 cup cucumber, diced
- 1/2 cup red onion, finely chopped
- 2 tbs fresh coriander chopped
DIRECTIONS :
1. Heat 1-2 tbs of oil, add 1 tbs of garlic (chopped), suate until it's rawness is gone, then add half cup of chopped capsicum, saute it for 2-3 min,
add 2 cup of boiled chickpeas
2. Add spices of your choice i.e salt, black pepper, cumin seeds powder and red chilli powder.
- Fry all together until the spices coated well to the chickpeas
- In a large bowl, combine the chickpeas, tomatoes, cucumber, red onion, coriander fresh and mint if using.
3.Chill and Serve:
- Let the salad sit for at least 15-20 minutes to allow the flavors to meld together. Serve chilled or at room temperature.
