I just made this salad! It is incredible! The taste is indeed so fresh. I am being treated for breast cancer as well as multiple myeloma. I am trying to eat healthier and this salad certainly fits into my diet. Thank you so much for sharing this recipe.

OMG just prepared it, did some variations because I did not have all ingredients. I used cilantro instead of parsley and two jalapeno peppers that come in a can, Mexican type. I used 4 Roma tomatoes, and used 1 cup of olives stuffed with pimento. I omitted the mint. It came out very yummy. Thank you so much for sharing this wonderful salad. It is crunchy and yummy.

Been a subscriber for a while now having adopted the premises of the Mediterranean Diet. What I love about your channel is that you put the recipe in the description, so I don't have to go to another website to access it. I also love your well thought out explanations And your adherence to Greek cuisine. I grew up Russian Orthodox and here the Greek and Russian Churches held their respective Church Picnics on a site near each other. We had our ethnic specialties, they had theirs, but by nightfall we all were sharing the specialties. What blessed memories. Those were my first ventures into The cuisine of other groups. And food Can be adventuresome. I love to eat good food and your site is one of my Gems on KZread. Stay well....

Allow me to add my two-bit to John Kozup's relevant observation re cross-cultural and cross-faith get-togethers being adventures. I think that sharing ethnic foods (n trying out cooking them) is a strong bonding adventure without losing one'd identity. Yummy!

My journey through the cuisines of the world has given me deep respect for the traditions and individual dishes that my journey has shown me so far. Food is life affirming and a true gift from God.,. Even the most humble beans and rice dish with only salt as seasoning!! Dimitra, I see that you left the white part of the scallion, with the root end. If you plant that part in a pot inside, or the garden, they will regenerate and you will get new scallions in 2-3 months.

I do this and have two planters filled with green onions. I go out and cut at ground level with a knife, they will come back like magic.
