Ingredients 食材:
1. The dough 面团:
* 50g Cake flour 低筋面粉 1/3cup+1tbsp
* 180g Bread flour 高筋面粉 1cup+2tbsp+1tsp
* 30g Egg liquid 鸡蛋液 1oz
* 115-120g Milk 牛奶 7tbsp+2tsp
* 20g Sugar 糖 1tbsp+2tsp
* 3g Instant Yeast 酵母 1 tsp
* 2g Salt 盐 1/4 tsp
* 25g Unsalted Butter 无盐黄油
2. Other ingredients其他材料:
* Green onion 葱花
* 1tsp Oil 油(add to green onion)
* egg liquid 鸡蛋液
* Kewpie Mayonnaise 丘比蛋黄酱
* Meat floss 肉松
Mould size :11"x11"x0.8"/ 28cm*28cm*2cm
模具大小:11"x11"x0.8"/ 28cm*28cm*2cm
Preheat the Oven 180°C(360℉), baking for 15 minutes
烤箱预热180°C(360℉)烤15分钟

What is Meat Floss? I have never heard of it before. Is there an alternative and if so what is it?

Chinese supermarket has it. It is dry or dehydrated pork, beef, or chicken but very tinny pieces, taste like cotton. It has a lot of sugar put in during the process. Therefore, it is not a healthy food for current point of view. Chinese parents used to give those to their starving children during the era when China was ruled by Chairman Mao and lack of necessities, meat was scarce.

You are welcome. Did you use rolling pin to roll the bread, I think you should have something to help you do it, Thant will be easier for rolling. And the bread should be warm. You can try one more time, and take look the video before you do that.

You probably cooked so long and surface is too dry. If your oven is hot, you need to reduce the time of cooking. I tried. Mine is good.

谢谢你的支持,面粉的吸收性不一样,所以如果面团干的话多加牛奶没事,这个是中等湿度的面团不干,但是也不是很软那种哈,干的话是烤的时候太长了,你尽量用高温15分钟表面金黄色就可以

是的哈,要带着余温的时候卷,晾了就会开裂
大琼可以请教你几个问题吗~ 1.开了口的酵母还在多久用完呀?平时应该怎样存放呢? 2.我在英国 天气比较冷 冷天总是发不好面团怎么办呀~ 谢谢啦~

你密封保存就可以了,常温保存挺久的,我家的有时候买很大的一袋都要用好久,英国潮湿的话建议你买大袋里面是小袋子包装的,那种比较好,如果你自己能有一个很好的密封盒子也是可以的哈,不受潮就可以,你可以放在烤箱里面发面啊,常温冬天是很难发面的,馒头我是放在锅里,加一点热水发酵,热水是大概45度,烤箱的话你参考手撕面包那个视频,我是在烤箱里面下面放一盆热水,然后把烤箱的灯打开发酵,也可以在烤箱里面喷一些水增加湿度。

面粉的吸水性不同,牛奶的含量其实可以稍微调整一下哈,我用的是aurth king的高筋面粉

这个经常可以碰到打折的,我是之前官网买的,建议不要买太大的,5qt的就可以了
烤出来的面包片太干了,一卷就裂开了。这个怎么调整呀?是烤箱不可以用Fan,要用上下火吗?

不用开风,上下火烤就可以了,有风的话要缩短时间,不然烤的太干了就容易裂开

你是温热的时候卷的吗?晾凉卷的话就容易列,还有卷的手法一定要注意,不然稍微一压就裂了

我用的是KitchenAid,挺好用的,我用的几率比较高,包子面皮里面水太多了,下次做的时候你适当的减少一些水分,还有一个原因就是包子馅儿水分很多,你看我牛肉包子就不是很挺,但是像灌汤包那样的话就是有点过了

比较失败,主要是我的底太硬了,卷的时候全部裂开完全没有卷起来😂 但是口感还是很好的

加了低筋面粉会更松软一些,其实你全部用高粉也可以

卷的时候好卷一点,不会把皮拉破,拉断,从切开的那边开始卷作为面包卷的中心哦

其实厚的面包是可以卷好的,温热的时候卷,不要凉了再卷哈,凉了就很容易开裂,还有不要烤的时间太长,不然面包表面太硬也是很容易开裂的,新手刚开始都不会怎么卷,慢慢熟练就会卷了,这个比卷蛋糕卷要稍微简单一些
