Mawmaw's Crispy Sweet Pickle Recipe

Crispy Sweet Pickles Recipe (Mawmaw's recipe)
7 to 10 pounds (20 cups) cucumbers, washed and sliced into 1/2" thick rounds
2 Gallons Water
1 cup Pickling Lime
8 cups White Distilled Vinegar
8 cups White Sugar
1 Tablespoon Salt
2 generous Tablespoons Pickling Spice
(1) Mix water and lime in a large enamel coated crock, enamel coated pan or a glass container. The lime soak is what causes them to stay crunchy so do not skip this step. DO NOT USE ALUMINUM! Add the cucumber slices and soak for at least 2 hours to overnight.
(2) Drain the lime water and rinse and drain the slices 3 times to completely rid them of the lime. Cover the slices in ice water and soak for 2 hours or overnight in the refrigerator.
(3) Mix the vinegar, sugar, salt and pickling spice in a large pot. Heat and stir to dissolve the sugar. Drain and add the cucumber slices to the pot. Bring to a boil and turn down and let cook for 15 minutes. Fill sterilized jars with pickles and cover with the syrup leaving a 1/2" head space. Top with a sterilized lid and twist top. Tighten only finger tight.
(4) Water bathe for at least 10 minutes or let them cool completely in the water bath. Lasts on the shelf up to 18 months. REFRIGERATE AFTER OPENING.

    I can remember my Aunt Rhea salty dill pickles! At our family reunion after she passed that year they found 13 jars in her room canning stuff. We auction them off to pay for our reunion space the next few years. Paid 10 dollars n seven dollars! I miss her snapping pea n lookin for 🥔 potato! She also had beets sauerkraut eggs! I kept my jars still have them. I love your story’s n I so wish the world was like it was. God bless you both! I hope you make cook book with stories like these!

    My mom had a big enamel bowl exactly like that. There were pictures of my sister and me sitting in it outside in the yard when we were very young. She still had it for many more years until she passed away. Wish I had it now. My mom and mother-in-law also made sweet pickles. My M-I-L called them Lime pickles. My mom called them Icicle Pickles. they were very crunchy so I'm assuming my mom also used Lime. Mom's were colored a very deep green and they were so good, as were my M-I-L's. I think, if I recall, my mom's took two or three days to make. Great memories! ☺

    My mama made these, delicious. She made pear relish, it was sweet and hot(spicy). The best thing to eat with dried beans. She made green tomato pickles. You name it, she made it.

    Ok Mawmaw.. I loved this.. Very different but creative.. I enjoyed this! I am always learning something new from you Chef Amy.. From cutting up a bell pepper to now doing something creative with pickles.. I would actually use those pickles on a gourmet burger.. I know it would be fire!! Juice and all!!     I have my enamel baby bath tub it’s 76 yrs old it’s kind of cool to have now you know how old I am lol. I use alum for mine is it the same as lime ?I have never seen pickling lime here in our stores. 🇨🇦

    @@amyslouisianakitchenAmy I make 9 day pickles not sure if they are the same flavour or not (pickling spice vinegar suger ratio same) but my question is I put my sliced cucumbers in a Home Depot heavy plastic pail as I can’t lift up the crock can I use the heavy plastic pail wit pickling lime which I had to order on Amazon. Excited to try these our cuc’s won’t be ready for a bit here in Ontario

    Thank you for sharing your family recipe. I've never done this before but I'm going to now. My question is, after you filled the jars and put the lids on and set aside, do you wait for them to cool, or can they go directly into the boiling water? Also, is there an alternative to the pickling lime as I have read it is no longer recommended as safe for consumption. Thank you :)

    They go directly into the hot water fro 10 minutes. Then take the jars out to cook completely.

    I have so many cucumbers I have put up 19 quarts and 18 pints and a half of sweet pickles. We use the lime method. Not too many people use this method any more.
