CHICKEN-N-DUMPLINGS Recipe with Buttermilk Cornbread 🧈🥛🌽🍞

Homemade CHICKEN-N-DUMPLINGS with Buttermilk Cornbread
In a large stock pot cover a whole chicken (or chicken pieces) with cold water, 1 to 2 teaspoons Salt and Pepper to taste. Add 2 stalks of celery for flavor. Boil 1 to 1-1/2 hours until chicken is done and tender. I like mine falling off the bone. Debone chicken and strain the broth into a large Dutch oven pot or what you have that is large.
Homemade Dumplings Recipe:
1-1/2 cups (204 grams) All Purpose Flour
2 teaspoons (10 grams) Baking Powder
1/2 teaspoon Salt (3 grams)
1/2 cup (118 grams) (4 ounces) Chicken Stock or Broth
2 tablespoons (28 grams) Oil (Vegetable, Corn or unflavored Coconut Oil)
Mix dry ingredients then add the liquid. Stir to bring together and roll out onto a floured surface very thin (approx. 1/8 inch). Use a pizza cutter to cut into 1-1/2 inch x 3" rectangles.
MILK AND BUTTER FOR FINISHING
Bring strained broth to a boil in a large Dutch oven type pot. Add dumplings a few at the time and let rise to the top before adding more. Cook for 5 to 10 minutes after last dumplings. Turn on low and add the cooked, chopped chicken, a few tablespoons of butter and a pour of milk (about a cup). Cover with the lid and let sit for about 20 minutes to come together and the dumplings get done. I make cornbread and peas to accompany them.

    So Amy, have you ever served your dressing with your chicken n dumplings? I grew up on the Mississippi Coast, Biloxi to be exact and until I moved just 55 miles north of the coast to a very rural community at the age of 40, I had never had dressing with my dumplings. You wouldn’t think 55 miles would make that much of a difference but it did. I went from a predominately Catholic community where folks ask if you’d like a cold beer on a hot summers day to a Southern Baptist community where you get sweet iced tea. I had culture shock for the first year, but now I fit right in. I love my chicken n dumplings with dressing, tomato gravy on my biscuits, and okra in my field peas. That’s not to say I don’t still love my gumbo and jambalaya.

    Cooking is very therapeutic for me, down to the act of peeling , chopping or dicing my ingredients. As a Southern woman, I believe we show love to our families through our food . I genuinely love to cook , and I take pride in my food . I cook quite a bit in cast iron because that is how my grandmother cooked. Amy, do you ever make Mexican cornbread when you cook a big pot of beans ? You are a delight to watch, and the camera loves you. ❤

    I loved reading your comment. Cast iron is so wonderful. I have some of my grandmother's pieces and I cherish them. Yes ma'am I do make mexican, cornbread. Actually muffins and they are so so moist and good. I will do that soon when it cools a bit outside. My friend would add hamburger meat to her cornbread and cook it in a big cast iron skillet. We would eat it like a, big slice of pie with some beans. So good.

    @@amyslouisianakitchen I generally don’t add meat to mine . I add jalapeños ( unless my grandchildren are eating with us that night, then I just use 1/4 cup of the juice from jalapeños I’ve pickled) freshly grated cheese, and if I’m lucky enough to have some fresh corn on hand, even if it’s frozen, I add some of that . I add a little cumin, onion and garlic powder , it is delicious! You could really add whatever you wanted. I prefer to make cornbread sticks. I have my grandmothers cast iron cornbread stick pans. I treasure them.

    Dear Amy, I just found you and I am so happy 😁. Your dumplings are what my Grandmother called "slicker" dumplings as opposed to drop style.     Your Dumplings recipe and cornbread dressing is just like my Mom's. I follow Mom's and your recipe, too. So comforting. Southern cooks deliver the best flavors. I am 76 now, still follow this same recipe.P.S. I roll my Dumplings extra THIN, also. They are beautiful and delicious.

    Miss Amy I just wanted to thank you so much for this video. I grew up in the Missouri Ozarks about in Arkansas. My granny used to make the best chicken and dumplings and my momma made them just like my granny did. As life went on my granny has gone to be with the Lord and in 2011 my momma went to be with the lord. So I have sure been missing good chicken and dumplings. I knew how to cook the chicken and make the broth but I had no idea how to make the dumplings. lol I’ve always been a measuring kinda person but my momma tried to learn me to make dumplings. lol she’d get out her flour crock and sift a pile of flour then she said well you make you a hole. I was lost but you gave a recipe and lord almighty it was just like my granny’s. So from the bottom of my heart I thank you for this video. May God bless and keep you and yours.

    I love the videos where you talk about the old days, both of my parents my grandparents aunts and uncles have all gone to heaven, and I think of how when I was younger how me and my cousin would play in the cherry tree in the back yard of my family home running and playing in the field, helping my mamma can chow chow and tomatoes and smelling the fried chicken or big pot of vegetable soup for supper 😢I miss those magical days

    Amy it’s late at night but I had to watch every minute of this video. It was a good long one and I enjoyed it. First my momma always made the dropped dumplings that fluffed back up light and fluffy. She never made the rolled out thin dumplings. I may just make some like you one day just to try them. I never see anyone make them as I do, or my momma I should say. Lol. Also I’ve never seen anyone add a cup of milk to it. You would think it would curdle up on you. Also I’ve never seen that BaconUp. I’m definitely going to see if I can find that. There’s many times I can use some bacon grease but don’t have any at the moment. Also I’d love to see you do a video on how you clean and season your cast iron pans. Especially what’s the best way to clean them and then season. Another thing is where to keep them all because you can’t just put one inside the other with grease all on them. I guess you just have to figure that one out. Lol. Thanks Amy!

    After my dumplings are finished cooking but still in a slow rolling boil I’ll add 1 cup of whole buttermilk and then add the chicken back in. The extra buttermilk flavor is so WoW!

    Yes, ma'am, you can use self rising flour in place of AP flour. I do it for mess saving purposes. I've made them both ways and there is no difference in flavor or dumpling texture. Thank you for another wonderful video. I love watching because I love your bubbly personality.

    This look great one of my favorites my mother made great dumping the first time I made dumping i made them with self rising flour lol they grew an grew i called my mother an ask what was wrong thy grew an grew she said get a bigger pot lol so don't use selfrising flour lol lol

I truly remember hearing women folk of the South say "Always buy salt with eye-dying in it. But I don't know why they say that. I love your videos and recipes.     We lost a freezer about 3 years ago! We shut the door and ran n bought a freezer! Our freezer was 22 years old! But worked great! You have a good 36 hours if you leave it shut! Per the google! But you need to leave it closed! I checked as I transferred my contents! We brought it home in our trailer n installed it our self! We saved everything except FFries n I threw 5 lbs in the oven! While I transferred! God had a plan!

    I have taken them to functions before. I would put them into a hot crock pot. And keep it on low when I arrived. How far do you have to go? Mine would be a local function like church or a family reunion. The hit crock pot keeps them warm a while even not plugged in. If you have a crock with a warm setting it will be perfect.

    Sounds like you need to put a surge portector in your home to protect all your apliances from when the power goes out and you get a power surges .

    Amy, you should check with your homeowners insurance agent. It sounds like you might have a claim due to the lightning causing your freezer to go out. Sorry but I thought about that and wanted to tell you before I forgot. I used to be an insurance broker but I’m now retired. I know what a mess it can be when your freezer goes out. I lost the food from three freezers due to a lightning storm and it cost me a lot of money to replace the freezers and the food!

    You should get some surge protectors and plug all of your appliances and tvs and computers into them this wil save them if the electricity goes out or incase of a storm

    I love chicken and dumplins! Make mine homemade like my mom too. I use wax paper in between the layers instead of flour and put them in the freezer until my chicken gets done and make my broth. And I like biscuits with my dumplins… So glad the little calf was ok….that would have been so sad if those stupid buzzards had got to that sweet calf!😡😢

    @amyslouisianakitchenmurray Thank you for replying. I meant the measuring cup with the red lid. Looks like pyrex. I tried to find the video you used it in. Also, you had a metal rack you used in a disposable pan (you said it was part of something you got from your mother) I tried to find that as well. Loooove your videos!!!! I made mango preserves using your recipe from the blueberry and strawberry video and it turned out AWESOME! Used less sugar though as mangos are very sweet. Please 🙏 let me know.     I have found that when I fry a whole chicken that I will go for the oysters. After I eat those I'm very satisfied. I don't want anymore meat. Can't explain it.
