That kinda helped me to understand the quote from Ratatouille "Anyone can cook" Do not try to cook , as if it's an effort , but treat it like something playful , as if you're playing a game,a serious game, that is. Use your Ring, middle and index fingers to hold the front, and your thumb on the back. With the trio at the front, keep your middle finger in the front and center, and the other two fingers firm behind. Your middle finger's intermedie phalange's joint should be always touching the blade of the knife, that way, it will always protect the rest of your fingers. Given that won't give you Marco's speed by any means, but it with just a bit of practice (took me a couple of days after I learned it).
