Making Mozzarella Cheese at Home
By popular request, I'm finally showing you all how I make my mozzarella cheese at home! This has been a delicious addition to so many home-cooked meals in our house, so I hope it finds its way to your home and kitchen too!
Ballerina Farm Homemade Mozzarella - Recipe and Instructions
Preparation Time 40 minutes
TOOLS
Cast Iron Pot
Cooking Thermometer
Wooden Spatula
Rubber Gloves
INGREDIENTS
1 Gallon of Raw, Unpasteurized, Full Fat Milk
Citric Acid Mixture:
1 1/2 tsp Citric Acid + 1/2 c water
Rennet Mixture:
1/2 tsp Animal Rennet + 4 Tbsp water
1/4 c French Salt
STEPS
Note: best to make cheese with milk that is at least 1 day old.
1. Pour Milk into cast iron pot. Gently warm the milk to 55 degrees.
2. Create the Citric Acid Mixture:
Add 1/2 cup of water to a glass
Mix in 1 1/2 tsp of Citric Acid until dissolved in the water.
3. Pour the citric acid mixture into the milk and lightly stir in an up and down motion. Do not over-stir.
4. Take the milk and acid mixture to the stove top. Warm gently to 88 degrees, stirring occasionally with a light, up and down motion.
5. Remove from heat and add the Rennet Mixture to the milk. (1/2 tsp rennet + 4 Tbsp water)
6. Return the pot to the stop top and gently heat to 105 degrees.
7. Once 105 degrees is reached, remove from heat and cover for 5-10 minutes until the curds start to form.
8. While waiting, prepare a bowl with cold water to cool and store the cheese once it’s formed.
9. Cut the curds using a knife and add 1/4 c of french salt to the curds and whey mixture
10. Return the pot of curds and whey to the the stop top. Heat to soften the cheese but do not boil.
11. Using heat protective rubber gloves, scoop out the the cheese and form into fist sized balls. Break them apart, opening them up and twisting them back on themselves.
12. As the cheese heats, watch for when the balls are ready to stretch. They make break a little at first. That’s okay. Just keep stretching and reforming.
13. Stretch and pull while dipping back into the salty whey mixture.
14. Form into nice, even cheese balls and drop into the cold water.
15. Slice and enjoy with fruit, bread, or cook in your favorite dish.

Like everyone else is saying , you have so much patience. My first thought when Mabel wandered in was NO!! Dad was supposed to have her. Mom just took it in stride and continued her instruction. Great Mother. She makes the entire process of pregnancy and raising children look easy. All the while remaining fit and gorgeous 🙏❤️

Sounds like you mention her having money as an excuse for your own shortcomings. People can always improve where they lack through perseverance and repetition, and money has nothing to do with it here.

This is beautiful in every way! Thank you for showing what real life is like being a homestead/farm mom making these homemade things. Kids are around, being loud, being held, on tables, stuff falls, hair in a quick bun, dishes in the sink. All real!! It’s exhausting watching some other influencers that appear to have everything perfect and quiet when it is all just staged for that moment, and discourages moms from even trying. This is what real life looks like in my house too! Involving the kids is the way to go.

Wow wow wow 😍👍 it's nice to see this videos when the children grow up with their mother, and not in front of the computer every day. I grew up like that too. and we are 9 children 😊our grandmother, she helps my mother a lot, our grandmother loves to bake and cook for us. and especially when all my cousins were together.. there were a lot of us then.. I miss my grandma 😢 I'm glad I found this channel today. I wish everyone a nice day!

We are a family of 11, 9 kiddos ranging from 18-2. I make home made pizza almost every Friday. I'd like to use some homemade mozzarella. This video gives me some confidence that we might be able to pull it off. I might need two batches to have enough but I bet the flavor is worth it.

I just want to say, you're such an amazing mom. Good day! I’m a professional cheese maker working for a company producing and selling bacteria cultures and enzymes such as rennet. I liked your video a lot and I’ve noticed you had few question on some things, so I’ll try my best to answer some questions :) Rennet is basically an enzyme solution that “cuts” the outer flagella of casein protein so that milk proteins start to stick together and build up a protein network, locking in fat etc from the milk. The reason mozzarella is stretching is because of demineralization of the proteins. The proteins in milk are held together by calcium bindings which is double binding in chemical terms, and it’s kinda strong binding. So in mozzarella we don’t want that cause we want a softer and stretching texture of the mozzarella. This happens when milk is acidifying, and acidifying the milk is normally best by bacteria culture as it goes slower and as such is abit more gentle on the proteins, adding acid directly is commonly done and it work, just not the best in terms of final quality let’s say. So acidity is added one way or another and this is basically extra H+ (hydrogen) added to the milk/cheese, and these H+ goes in and pushes calcium out. And at a certain pH the stretching will start working which is pH 5.2 to 4.9 (this is called the stretching window. So if your cheese is too hard or rough, you can try to mix in some more acid and it should loosen up. But careful it’s not good to add too much as well. Good luck with the cheese making :) 🧀

I always put salt in the cold water before storing the mozzarella in it. This reminds me of me with my kids. Meanwhile they are all adults and have families of their own. I recently got another granddaughter from my youngest son and his wife on January 8th in 2024, the third baby in the 4th year of marriage, and certainly not the last baby. Huge families are the best. ❤
