How to Make Sourdough Bread - Step By Step with Hannah

GET STARTED WITH THE BALLERINA FARM SOURDOUGH KIT and BOOKLET:

FULL RECIPE
Ingredients
250 g active starter
735 g water + 50 g of water when you add the salt
1000 g all purpose flour (always use unbleached)
24 g sea salt
DIRECTIONS
1. Add your active starter to a bowl.
2. Add 735 grams of water.
3. Mix starter with the water till it is “milky."
4. Add the flour.
5. Mix those ingredients together for 2-3 minutes until just combined with whisk then hands.
6. Cover the bowl and let it sit for 90 - 120 minutes.
7. Add the salt and remaining 50 grams of water using hands to mix.
8. Knead the dough for 5 - 10 minutes, until water and salt are fully incorporated.
9. Cover the dough and let rest at room temperature until doubled in size. OR place it in the fridge for 8-10 hours for a slower fermentation overnight. I prefer this method.
10. Shape Loaves: a) dump the dough onto a clean counter b) divide in half c) stretch to a rectangle d) fold over the sides first, then e) roll it up into a cylinder. The dough will be a little sticky, you can add flour if that helps! 10f) Once rolled up, push it away from you, and then pull towards you to build tension in the dough. Do that 3-4 times until your loaf is round and bouncy.
11. Repeat step 10 with the second loaf.
12. Leave the loaves on the counter uncovered for 20 minutes.
13. Using a bench scraper, lift and flip over. Gently repeat the shaping process (Step 10) one more time, the dough should be less sticky this time.
14. Repeat shaping steps with Loaf #2.
15. Gently, with a bench scraper, flip over and place the dough into the floured proofing baskets and cover with plastic. (I love to use shower caps.)
16. Place both baskets in the fridge for 2 hours to rest and rise.
17. Pre-heat the oven and cast iron pot (with lid) to 450º for at least 15 minutes or loaves are ready
18. Take your first loaf from fridge and flip the dough out of the proofing basket onto a sheet of parchment paper
19. Lightly flour the top of the loaf
20. Score your bread with the Ballerina Farm bread lame creating a shallow design.
21. Create the main score to allow expansion while baking. A C or O shape works well.
22. Add a small amount of water to the pot. Use the parchment paper to lift the dough, into the preheated cast iron pot. Then immediately into the oven.
23. Cover and bake for 30 minutes at 450℉ / 232℃ with the lid on - Remove the lid and put back in the oven for another 5-10 minutes or until a deep golden brown.
24. Remove from the oven and out of the pot to cool before slicing into it.
25. Repeat steps 19 -24 with the second loaf. Enjoy!

    @@sherrysmith291 You can still bake with it but it may not raise as much. You could reshape it into a flatter bread similar to focaccia if needed.

    Respectfully I made my first loaf with your process, and it was great. I used another process that was much less labor intensive( fewer steps) and the second load turned out just as great. NO real difference. There are many you tubers who have sourdough processes and boy they are all very different. My main take away is..MAKING SOURDOUGH BREAD IS EASY…. Choose the process that YOUR time allows. 🥖🍞

    My mother had nine of us ..she only baked on Sunday early before 12I clock mass... For the week...God bless her ...we all looked immaculate going to mass on Sunday but the rest of the week we would be lucky if our faces were washed...I appreciate this vlog because it brings back memories...we had hammer house of horrors on Saturday night ... Frankenstein, Dracula and werewolf's and we luved it ..mass next day..I'm glad you are having children... people se it as an ailment or a sickness so fair play too you! Belfast Irish woman

    I'd love to see a video on tips for raising lots of kids. I'm going to have a large family but I grew up with only one sibling. I was homeschooled, so that part isn't new to me...but I'd love to hear your advice on cooking for seven, educating seven, chores, picky-eaters, mass meltdowns, bathing everyone...etc.

    ⁠​⁠​⁠@@makotofox1987I’m certain that it’s much easier to have a large family when you’re millionaires as these people are. Have you ever seen Hannah doing mountains of laundry or scrubbing the floors? All that takes tons of time away from a large family, so I’m quite certain that, with their $$$millions, that they can afford a staff that does all the laundry, cleans, etc. A lot of children are very expensive & the older they get, the price goes way up. If college is in the future, be certain to investigate scholarships early. This is a lovely family and I’m happy that they can afford to give their children the very best lives possible without the slightest worry about money and a staggering amount of chores.

    I asked my husband for one of your ballerina farm sourdough kits for Christmas so hopefully I got one and then I can use this video as a guide! I tried making sourdough a couple years ago during lockdowns and it didn’t come out quite right. I’ve heard it’s a bit of an art form and takes time to master haha. Wish me luck! 🙏🏼

    I can't belive how well my bread turned out!!! I'm blown away 😀 The dough was amazing to work with - never too sticky! It rose and goldened so perfectly in the steamy oven, my jaw dropped. I followed everything from the video, and this is the first time my bread looked pretty much profeshh 😅!!     I just doubled this batch. But noticed that the water was too much. Is it 753g total? And you save 50g for the salt? Or is it 50g in addition to the 753g, making it 803g total?? It was way too wet so I’m assuming it should have been 753 total.

    @@janaelongoria8653 Its 735 to start. At the salting stage, you can make adjustments either way if wet or dry. Your climate will be a factor. My recipe work here in the dry rocky mountains. Make adaptations if you have to. :D

    just mix equal parts water and flour then rest for the day, the second day you can add the same amounts again and let it rest. then the rest of the week, discard half and feed the same ratios. it should start to bubble up and in a few weeks you’ll have a living starter

    Yayy!!! A step by step...was waiting for this! Now, step by step to make the starter please! Also, if anyone here can answer this question for me: she uses her active starter for the levain phase, (mixture of starter, water & flour). Now, looks like she used the entire starter. How do you save active starter to continue the feedings? Do you let it grow till its big enough to use in your sourdough recipe, while leaving extra? I'm sure she has multiple starters in her home, but for someone like me who's just starting off, do I have to make sure my active starter Is big enough to leave some behind (not discard) but actual starter, to continue the process. Hope this is making sense and has been pestering my mind constantly 🤣

    Ruby, what I did was wait an extra day and use that discard and keep in the fridge:) but, I will say, you don’t need a ton to feed it! If you have an itty bitty left, feed that and it will grow again!!😊

    I keep a starter in the fridge and build a levain when I am ready to bake. I take my cold starter from the fridge. Do a feed and let it rise. Then start a levain from that starter. The remaining starter goes back in the fridge. Her starter/levain recipe is 30g starter, 125g water and 140g flour. This makes enough (plus a little extra) for her recipe.

    Mine doesn't seem to double in 8-10 hours in the fridge and is much stickier than yours when I take it out after 10 hours and then when I do the first shape after taking it out of the fridge, it doesn't hold it's shape much and flattens some in that first 20 minutes on the counter. Yours just looks so smooth and pliable and mine looks more shiny. Any tips?

    The link to your recipe in the description is what I was going off of and it's pretty different from what you described in your video (just rewatched because my dough doesn't look right). Hopefully I can still save it 🥴 just wanted to tell you they don't match up.

    I followed the ingredients and directions in the description since it was easier to screen shot and follow, and my dough turned out SO STICKY. I kept with it hoping it would turn out but by the point of forming the loaves, it was impossible to work with. It stuck to everything and wouldn’t form a loaf, even when using extra flour. I had to give up. I tried a recipe from farmhouse on Boone and so far it has worked much better, my loaf is in the oven right now but I didn’t have any of the issues with stickiness. 🤷🏻‍♀️

    I’m confused. The recipe on the video seems different to me than the recipe directions on the website and video caption. The first rest time in the video she says 1.5/2hrs but the directions say 30mins

    You made that look so easy, question though regarding starter, how much do you need to leave in jar to keep it going? I'm in Australia and haven't yet bought you starter kit. I am aiming for my birthday next year!! Thank you

    I've had the same question! All these videos I've watched always seem to use their entire jar of starter & it's confusing on how much you actually need to keep behind to continue the feeding process
