How good to see you and your boys. I didn’t recognize Juju! He’s really grown tall. I used to hate pinto beans, growing up. I’d only eat them with lots of ketchup. Then in the last year I tried them again. I began using bacon and herbs and it changed my mind entirely. I love them with bacon, garlic, thyme, savory and marjoram. I’ll try this!

I made this dish yesterday and oh my gosh I will definitely keep it in my repertoire of all-time favorite recipes. It exceeded my expectations as a really delicious meal. Highly recommend it. I roasted the poblano‘s in the broiler on a whim because I have never done this before and it was quite easy. Thank you Pati.

Beans also freeze fantastically! Patti is very down to earth. It takes a lot of energy to teach and cook at the same time. She does both so well. I love to see passionate people also teach others their craft. I make vegetarian style pinto beans and just add safflower oil, then cook them in water and garlic clove. Sometimed I will add chopped jalapenos. After cooked, I add spices and salt and often I mash them into refried to be used for nachos, burritos and other dishes. Sometimes I only mash half. I usually end up freezing what we dont use right away.

Americas test kitchen debunked the salt question. I soak overnight in the refrigerator with a tablespoon of course salt. If you soak your beans are less likely to burst or break.

If yoiu soak your beans for 3 days it breaks down the phytates and makes them less gassy and easily digestible. Soaking doesn't change the taste at all. Change your water twice a day
