Delicious strudel dough made with ice cream and filled with apricot preserves, raisins and nuts! An elegant, sweet dessert which will be a favorite to many. This recipe is easy and fun to prepare and makes 20 slices of strudel. You can easily double the recipe for 40 pieces. You will need to chill the strudel dough for about 35 minutes or one hour ( if doubling the recipe) before rolling out the dough into separate rectangular shapes. Roll out each rectangle to around 8 by 11 inches, or about the size of a sheet of regular printer paper. Spread the top of each rectangle with the filling, roll, bake, and enjoy! Recipe is below. Ice Cream Strudel Dough
Dough:
1/2 cup soft vanilla ice cream
1/4 pound butter (8 tablespoons), melted
1 cup flour
Filling:
1 cup (8-ounce jar) apricot preserves
1/2 cup chopped nuts
1/2 cup raisins
Yields: 20 slices of filled strudel
Bake in 375 degree F oven for 35 to 45 minutes or until golden brown.
This recipe can be made ahead of time and frozen before baking. Thaw completely prior to baking.
