If you're in the mood for something a little different next time breakfast rolls around, this recipe is worth trying out! You only need two apples - whatever you have on hand. I happen to use Gala apples for this recipe. The maple syrup and brown sugar both caramelize and develop a delicious crispy edge on the pancake while it bakes. In the event you have any leftovers, you can wrap the baked pancake and keep another day without any refrigeration. It keeps well until the next day. To serve again, all you have to do is remove the plastic wrap first then quickly reheat the pancake in the microwave on a microwave-safe plate. It tastes as amazing as the first day you made it! Upside Down Baked Apple Pancake
Preheat oven 400° F
You will need a 9-inch round nonstick cake pan
Syrup Mixture:
1/3 cup maple syrup
1/4 cup brown sugar
1/4 cup (4 tablespoons) butter
2 apples, peeled cored, and thinly sliced
Pancake Batter:
1 egg
1 cup milk
1 tablespoon melted butter
1 1/4 cups flour
2 tablespoons sugar
2 teaspoons baking powder
1/4 teaspoon salt
Bake 20 to 25 minutes. Once removed from the oven turn over onto serving plate. You can sprinkle top with powdered sugar or whipped cream, if desired.
Yields: 4-6 servings
