Hello Dear Friends! If you’re looking for an easy Italian cookie recipe to make for holidays, special occasions, or when your sweet tooth is begging for some attention 😀, here’s a great one to try out! This cookie is soft with a nice light lemon flavor. Don’t worry if the cookies are not perfectly shaped while dropping onto the baking sheets. They will automatically round out nicely while baking. As a kid my mom worked for an Italian lady that was also a caterer and would make these cookies. She would "pipe" the batter onto the cookies sheet which made for a kind of tube type of cookie that was round and the icing was also put on and "jimmies" or sprinkles. Loved them and would carry three or more in my pockets and eat when I was away from home. They were the best...

The only Cookie I could not find maybe you can do it next cidei would be the fig cookies. I don’t know how to say or spell ir in Italian. That would be awesome if you had a recipe for those as well. Thanks so much for your website. I love your cookie recipes just brings me a little closer to my friends near and far.

Hi Elaine, thanks so much for your kind words! I’m so happy you’re making the cookie recipes I posted 😊 I do have a filled cookie recipe my mother used to make during the holidays, only the filling is made with finely chopped raisins, prunes, walnuts and a little shot of vermouth. They’re super delicious! I’ll go find it and see if I can post it sometime soon. Glad to hear you’re enjoying the cookies you’ve made so far 😀

Hi Ravi! Make sure your lemon extract isn’t dyed. Also, if your icing is too thin it can be a bit more transparent, giving it a grayish looking tinge. Try using a clear lemon extract and add a little less water to the icing, or more powdered sugar (if too thin) to thicken and whiten it up a little more. Hope this helps!
