我試過直接在醃完後拿去低溫久煮然後再煎或者不煎,肉質都很好吃,也不擔心不熟。直接在那個真空袋醃完以後把袋子放低溫水煮然後再煎也不錯。所謂的Sous vide。如果擔心不熟可以再煮完把肉拿出來再高溫煮一下再煎(肉的具體溫度熟度根據食品安全而定)(除去真空帶是因為高溫水煮可能會使塑料釋放出有害物質(個人對真空帶成分特性不了解,可能不會發生這樣的事,具體應該可以看看自己買到的真空袋上面對耐熱溫度標示和說明吧))

Rose wine is very hard to get in the states so a good Shaohsing rice cooking wine will work just fine.
