馬來炒貴刁 - 車經 Char Kway Teow - Chasing Cars

唔係港式炒貴刁,呢隻比較接近馬來西亞嗰隻。同埋今集講吓車啦,雖然都講唔出咩大道理。
Gave me best shot on this Malaysian version of Char Kway Teow, and today's topic is about cars.
二人份量 For two people:
蒜三瓣 - 3 gloves of garlic
韭菜四條 - 4 sprigs of Chinese chives
芽菜適量 - a handful of beansprouts
菜脯數粒 - 10g of preserved radish
潮州魚片12片 - 12 slices of Chiu Chow fishcakes
臘腸一條 - 1 Chinese sausage
蝦八隻 - 8 prawns
雞蛋四隻 - 4 eggs
生抽醬油1/3杯 - 1/3 cup of light soy sauce
老抽黑醬油兩湯匙 - 2tbsp of dark soy sauce
Kecap Manis 甜醬油兩湯匙 - 2tbsp of Kecap Manis sweet soy sauce
蠔油一湯匙 - 1tbsp of oyster sauce
砂糖三茶匙 - 3 tsp of sugar
辣椒片少量 - pinch of chilli flakes
白胡椒粉少量 - pinch of white pepper
麻油少量 - few drops of sesame oil

你好Bob叔,首次喺你啲片度留言,我係馬拉肥仔。。如果生抽同蠔油嘅分量減少啲之後再加返啲魚露會更嘢味,而螄蚶口感最正就係喺最後先落然後兜兩下就上碟。。你哋外國人可能會覺得啲螄蚶熟晤熟噶,其實螄蚶好易熟,由你落鍋兜佢兩下之後上碟再上埋檯,到你食到蚶嘅時候就啱啱好喇,蚶過熟就冇嗮啲口感。。晤好意思有啲長氣,我好中意食螄蚶,所以想將個人喜好同大家分享。。多謝🙏

唔緊要呀。我都知我個做法唔正宗,都想聽吓馬來西亞網友嘅意見。暫時我睇到嘅留言係要落魚露,鴨蛋, 唔用菜脯,下次我去街市會買螄蚶再試多次。 多謝每位馬來西亞網友嘅建議。祝你哋國慶日快樂!!!

咁你下次再試嘅時候記得炒雞蛋同鴨蛋兩個版本,雖然話鴨蛋會好食啲,但係如果齋食鴨蛋炒嘅我個人認為冇咁凸顯出鴨蛋嘅香囖,如果同雞蛋炒出嚟嘅一齊食個feel真係會“嘩”一聲囖

Hi uncle bob..i am from Malaysia as well...for me pickles vegetable, chinese sausage and fish cake not really require. Crockles is a must ingredient for me! 😋 add in last few minutes plus fish sauce and chilli paste.

Malaysian here... I must say your Chau Kuai Tiew it's quite authentic. I'd also leave out the cockles when I order mine from the hawker stalls.... Yums!

其实不是的 槟城char kuey tiao很少有放蛳ham 可以试用猪油炒 如果河粉有小条的会更好吃
