I forgot where from, but im pretty sure water and similar liquids do behave that way. As long as the tubing's exit is lower than the elevation of the source, it will flow upwards then down and out.

Yes, the way self-siphoning works is by utilizing the weight of the water on the opposite end of the apex point to create suction. Compare it to hanging a rope over a stick. I watched 5 minute crafts, and while some of them would take longer than five minutes, I've actually done a few of them and they are legitimate.
