    I love lamb! Sometimes I eat sheep too… but, seriously, it’s an overlooked source of protein with its delicious, delicate flavour. On the kamado, it grills beautifully, absorbing all the best elements of charcoal. I find it hard to eat lamb without some kind of mint accompaniment. A bit of a heresy to leave it out, probably including it in the slaw might add the magic?

    Agreed, such a fun protein. Lots of forms around here raise it. Never saw the benefit of men, though I always used it in restaurants . Certainly would be a fun addition in that slaw, great idea!

    @@ChefEricGephart Good morning, Chef! Thanks for your reply. I make mint sauce the way my mum makes it with finely chopped mint infusing a blend of malt vinegar sweetened to taste with sugar. I don’t know who invented this venerable gastronomic tradition, but it truly enhances the flavour of lamb. Everything else on the plate too when dribbled liberally over the grub. Mint jelly is another option, but it’s not the same in my opinion. Another mum thing that goes with lamb is onion sauces. Basically, make a flour and milk base, add chopped onion, simmer until onions are soft, pour over meat. Dob some mint sauce on that and wahoo!

    No third option??? Seriously and you call yourself a chef? How about home made mayo, tastes better and much healthier than anything super processed stuff you can get from the store. And its so easy to make, 2 minues and you have all you need and so much cheaper too.
