Kurdishbestfood - KUNAFA/KUNAFEH
INGREDIENTS
🔹FOR THE SCENTED SUGAR SYRUP:*
▫️2 cups sugar
▫️1 cup water
▫️2 tablespoon fresh lemon juice
*You can also add 1 teaspoon rose water🌸 (optional)
*🍯 (You can use honey instead of the syrup if you like to keep it a little healthy)😋
🔸Syrup Directions;
▫️In a medium sauce pan, mix the sugar and the water until the sugar dissolves.
▫️Bring to a boil and then add the lemon juice.
▫️Let the mixture boil for approximately 10 minutes.
▫️The mixture should start to thicken very slightly, but it will continue to thicken after it cools down completely.
▫️After 10 minutes, remove from heat.
▫️Allow to cool a bit and transfer into a container.
▫️Cover well and store at room temperature.
▫️Once it cools down, pour it over your favourite dessert.
🔹FOR THE CHEESE FILLING:
▫️1 Cup PUCK Thick Cream
▫️3 mozzarella balls
🔹FOR THE KUNAFA CRUST:
▫️500g kunafa or kataifi/kadaifi pastry, fresh or frozen. If using fresh, freeze for an hour for easier cutting. If using frozen, thaw slightly
▫️1 cup (227g) ghee or butter, melted and slightly cooled*
▫️2 tbsp icing sugar
FOR GARNISH:
▫️Pistachios & rose
P.S. I’ve used a 12 inch (30cm) tray
🔥Bake on 180C for 30 minutes or until golden.
**As soon as the Kunafa is taken out of the oven drizzle with the cooled sugarsyrup. And serve with ice cream🍦 or ☕️.
