Thank you for the recipe. I just finished making it. I always wonder what japchae tastes like and fortunately it worked out well. I did change a few things about the recipe though: I bought Chinese sweet potato vermicelli instead of korean vermicelli. My noodles are darker than the ones shown, maybe it's because of that. Also, instead of dried shitake mushrooms I used fresh shitake mushrooms. The flavour is not that pronounced so next time I will buy the dried ones. It looks really colourful and just as I hoped. As for the flavour, personally do not really like too sweet dishes so for my next try I'll add a bit of red pepper and another garlic to make it more savoury. I'll also fry the carrot a bit more to soften it to my taste.

Do you have any kind of rice noodles or chewy noodles ?? This cellophane noodles are made with sweet potato or potato starch and it is very chewy... so it is totally different from wheat noodles like spaghetti... so if your country has any chewy noodles (Even rice noodles can work) , try it. One thing I want to suggest is ..if you use other types of noodles, watch the amount of soy sauce you put in it.. adjust the saltiness for your taste.
