This easy vegan japchae recipe is addictively delicious and super healthy because it’s loaded with vegetables! The secret is to buy 100% sweet potato starch noodles (not laced with any other ingredients) and follow my technique of par-cooking, then cooking the noodles in the sauce for the best Korean stir fry glass noodles you’ll ever have.

    I love vegetarian noodle dishes though I grew up in Hawaii sampling all kinds of noodle dishes like this one - with or without meat. Now that I'm eating a lot more vegan dishes, I LOVE making pancit or japchae...especially when they use the GLASS NOODLES...so addictive and delish and the more the veggies the better! THanks for this vid!

    This is by far the best japche recipe I’ve ever tried. Hands down. Omg. I did suffer through the background music for about two hours worth of repeats but it was worth it.

    Here I was cooking JapChae by boiling the noodles till they’re cooked by aldente, then seasoning them in the bowl and then adding the sautéed veges to the noodles. I’m gonna do your method and recipe! Love the vegan part of it too! Keep it up with more easy 1-dish meal, please!

    I am so glad I came across this great gal sharing her expertise, I will make some noodles half done and then let them finish cooking in the delicious base. It will be a grand way to use some foraged greens and mushrooms too!! Thank you so much 💖 for helping with your great tips. I like to dry saute the mushrooms too, or use dried, so flavorful!! You know it's great when they lick the bowl... l used to think...grr bad manners, not anymore, now I smile.

    Just tried this tonight, it’s fantastic and my son loves it too! Didn’t have carrots so I subbed in cooked Brussel Spouts. So many ways to mix this yummy dish up. Thank you! I don’t think I would have ever tried Japchae without your easy fun guidance.

    Definitely worthwhile reconnecting. All the traditional Korean cuisine is very healthy, and all the excess bread/meat/dairy use of Western cuisine is what undoes the health benefits of Korean foods. I discovered this after changing my own diet to Korean cooking. As meat is very expensive, I go without it except for Sabbath.

    A couple weeks ago I tried the Trader Joe's Japchae, it's been out of stock since then. It was so delicious I had to find a recipe to make my own. This recipe is easy, and so flavorful.     Great video!! Definitely would love more vegan Korean food recipes. Question: In case we don’t have sesame seeds or sesame oil at hand; would using tahini instead work? It is not ideal but it does provide the sesame taste.

    Thank you!! Toasted/Roasted sesame seed and oil are staple ingredients in Korean cuisine that cannot be substituted. Unfortunately, tahini would not work as a substitute.
