Kibbeh/Kebbeh - Meat stuffed bulgur

Kebbeh/kubbeh/kibbeh is a middle eastern recipe. The kibbeh dough consists of bulgur and clean, no fat, and very finely minced beef. The kebbeh dough is stuffed with a delicious ground beef stuffing, with lots and lots of delicious spices. This dish is a very elegant and proudy brought dish, that is often served with a good salad (fattoush or tabouleh), or with yoghurt. Kibbeh/Kebbeh can be a very intimidating dish for many beginners, but if I can do it, then everyone else can!
I made it very easy, step by step, and hope that the recipe is clear.
When I make this dish, I make a big batch, and freeze, to enjoy every time I crave kibbeh/kebbeh. This recipe makes about 30 piece of Kibbeh/kebbeh. It can be a bit time consuming, but is worth every second!

This is a fantastic recipe . You nailed the flavor. I have a challenge to recreate a vegan version for this coming Ramadan. Totally from scratch. My plan is to use mushrooms & walnut instead of meat. If you're ever making a big batch, some middle eastern stors actually sell a special extruder for the kitchenaid that extruded the shell for you. It attaches to the meat grinder part. Don't know if it's everywherre, but at least the kosher jewosh Syrian stors of NY & NJ have them.

We actually prefer plain youghurt. The kebbeh has so much flavour and texture on its own, that it would go perfect with something plain like youghurt. 🌸

Froylan Elizondo Hi! Hmm, your bulgur is either rather dry, and have not soaked in water enough. Or you dont have enough meat in your dough to hold it all together. The third thing can be your oli, which is not hot enough when you insert the kibbeh. 🌸

ToonEzon The juice from the blended onions helps from preventing sticking :)
That was a ton of salt
