Kaleb’s Cranberry Marmalade
12 oz fresh or frozen cranberries
Rind of 1 orange, finely cut
½ cup orange juice
½ cup honey
1 cinnamon stick (or 1 tsp ground cinnamon)
Place all ingredients in small saucepan, stir and bring to a boil, then reduce heat, cover, and simmer for 20-24 minutes until berries burst and thicken the sauce.
Serve warm or keep in refrigerator and serve warm.
Can be made up to 2 days ahead of time and rewarmed before serving.
