    Thank you! Thank you! Thank you! I’m so glad your husband convinced you to record this video. People, this is how we wash chicken in the Caribbean. Finally, a recipe that shows step-by-step the spice mix ingredients for Jerk Chicken. I always bought the premixed seasoning from the market for Jerk Chicken and it’s always too spicy and has an after-taste. Now I can control the level of heat myself while retaining the core spices for flavor. Yum! Also, I’m going to jazz up my rice and side salad based on your suggestions. And last, thank you for grilling that chicken until it’s DONE!

    Right Americans don’t know how nor do they care to wash they chicken or other meats(PAUSE). One of my High School friends invited me to his graduation cook out back in 2006 he is white his dad or uncle I forget which one. They literally just took the chicken out of the pack and threw it on the grill along with the steaks and beef ribs I was like yeah I’m not eating that I stayed and partied with them I did a store run for something and stopped at Popeyes to get me a two piece biscuit and fries with a Coke because I was not eating that food that they didn’t even attempt to clean!

    I'm a qualified chef of 37 years, here is a big compliment for you. I wouldn't eat food at anyones house as i am very fussy the way people prepare their food. I would definitely eat at yours. I can't give you a bigger compliment than that.

    ABSOLUTELY AMAZING! I am jamaican and I'm used to traditional jamaican jerk chicken dishes... but and I gotta admit.. your style and technique, plus the final product will definitely give jamaican restaurants a run for their money!! great job miss Rita!!👌

    That jerked chicken looks so good. Im Jamaican and havent seen rice and peas cooked this way before and im definitely trying this method next time (With the coconut milk of course lol). everything looks so good.

    This right there is real knowledge love everything about it because we are one Caribbean people doesn't matter which Island we from, and I glad that you make mentioned your recipe that it's not Jamaican nor Trini but your style and version. Too many times I watch lots of other cooks on here and everything is authentic Jamaican this Trini that, Bajan this when they live in North America, can they just say the Caribbean instead of this segregation and half of them can't cook. You took the time to demonstrate from start to finish what a wonderful teacher you continue the good work, God Bless.

    I'm currently 17 years old . I've been cooking for years now . I learned from my parents who are ages 65 and 58 . I learned the real old school way to cook . I live with my Guyanese boyfriend and believe me when I say the food is good but nothing can beat a Trini cook . Us trini ladies have blessed hands .

    Genius idea with the rice! I never would have thought to do that to get all your veggie intake lol! Will definitely try it tonight! :)💜

    Your dinner looks delicious and clean .The only thing I would do different is to cook my rice and beans with the coconut milk. Thank you for sharing !
