Escovitch Fish, Rice and Peas, Cabbage Stir Fry, Fry Plantain

Тәжірибелік нұсқаулар және стиль

Today I am making a Jamaican Inspired Sunday Lunch from start to finish that includes Escovitch Style Fish, Rice and Peas, using my own method and cabbage stir fry. I had also planned to make tostones but the husband overcooked the plantain so I turned it into escovitch style plantain. There were a few mishaps along the way like there usually is in a home kitchen, but one must adapt and move on in these instances--you will see how I do it. :-)
Hope you enjoy today's combination. These are my own personal take on these dishes so no negative feedback please!

Delicious as always but most Jamaicans season their fish with more than just salt and pepper. Well my family and friends that I have seen fry fish, they season up their fish before frying. My father taught me to season the oil too with garlic, scotch bonnet, pimento seeds and sometimes thyme, and the fish seasoning had several different spices. I am sure the fish cooked with only salt and pepper isn’t as good as the ones that are well seasoned. You did a great job with your escovitch many Jamaicans do it the same down to the pinch of sugar you left out.

Who got to eat the burnt fish? I think parts of it would still be edible. I love to eat an entire fish vs fillets of fish only I’m not very brave to cook that for myself at home. You prepped a great meal today. 👍
