Japanese Teriyaki Chicken/照燒雞: Simple Meal, 30 minutes of work

Japanese Cuisine is one of the oldest and most established around the world. One of their most famous dishes would by Teriyaki Chicken. Teriyaki literally means shiny glazed chicken, which is completely essential to how a good teriyaki sauce will look like, when made properly.
Teriyaki chicken not only looks good, tastes good but also takes minimal effort and time to prepare. In fact, this recipe should not take you more than 30 minutes to prepare in total. Just prepare the meat by seasoning it, make some additional glaze, and sear away. When the sauce is drizzled over the chicken, I guarantee that you and your guests will left speechless at how cool it looks.
While you're waiting for the Chicken to marinate, why no prepare some pickled cucumbers together? They are sweet, sour and refreshingly cool and provide a nice balance to the sweet-savoury chicken you are having. Most importantly, they also take almost no effort to make! Just pickle it with salt for about 8-10 minutes, wash off the salt with running water, add rice vinegar and sugar and you're set! Keep it in the fridge

Ingredients Required (Teriyaki Chicken):
Chicken thigh (4pcs)
Soy Sauce
Mirin
Brown Sugar
Sesame Seeds
Honey
Minced Ginger
Minced Garlic
Corn Starch (for emergency purposes)
Water (as needed)
Ingredients (Pickled Cucumbers):
Japanese Cucumbers
Fine Salt
Fine Sugar
Rice Vinegar

    I’ve made this about half a dozen times in the last month since finding this recipe. My husband keeps asking for it. I chop chicken breasts up into bite size chunks and add some vegetables then top the mixture over rice. I make extra sauce because it works well on beef on the BBQ. Thank you for a great recipe!!!!

    @@G8stromania im on my other account at the moment and wanted to share an update. ok so iv made this a lot now and EVERYONE loves it. We made a double batch for a party a few months ago and everyone was begging for more. One of the guests took HALF the glaze after I said we need to ration it and be fair because it was just so good xD Iv just made a 3 and a half batch for a big get together tomorrow night for people I haven’t seen since 2019. They are all very intrigued and I even sent them the video so they could understand how it is done. The amount of chicken I had to go through tonight is insane, but it will be worth it when they finally get to taste this masterpiece!

    we don't have those pickled cucumbers in the uk. Nearest we have is the large fresh cucumber or smaller gherkins which are either sweet or salt pickled. Which would you use?

    @@G8stromania in Switzerland, it's mainly electric, but older electric, since the housing market is mostly rental, so tenants expect the same when they move home. No one wants to keep to sets of pots and pans!

    Just to follow up - did this tonight, and the kid loved it! He even loved the pickled cucumber, so I guess I have you to thank for his having had cucumber for the first time in his life, I think (he has aversion to most fruit-like things, but not veg, not sure where cucumber sits). I did check the temperature of the meat, and it was over 75 degrees C when done according to your cooking time, and it was cooked through, so no issue as to my original question :-). I could save even more time if I used pre-made pickled gherkins, which I can get here.

    Yes you may! May need to add more honey in that case as Mirin is slightly sweet!

    They differ in terms of the alcohol used in the processing. Hon Mirin is sweeter. If you use Hon Mirin, just reduce the sugars added later on

    Should take no longer than 30 minutes to make this dish... let the thing sit in the fridge for 1hour, I'm going to let it sit for 2 hours... so that's 2 hours 30 minutes to make the dish.
