This delicious Japanese teriyaki chicken is made with succulent, skin-on chicken thigh coated in a glossy, sweet, sticky homemade teriyaki glaze. Not only does it taste incredible, but it's ready in just 15 minutes, no marinating necessary!
INGREDIENTS:
- 250 g boneless chicken thigh - skin-on
- 1 pinch salt
- ½ tbsp potato starch - or corn starch
- ½ tbsp cooking oil
- 2 tbsp soy sauce
- 2 tbsp mirin
- 2 tbsp sake
- 2 tsp brown sugar
- 2 tbsp dashi stock - or water

WHAT IS TERIYAKI CHICKEN MADE OF?
Technically speaking, teriyaki (照り焼き) is a way of cooking typically using soy sauce, mirin, sake, and sugar.
WHAT'S THE DIFFERENCE BETWEEN TERIYAKI SAUCE AND SOY SAUCE?
Soy sauce is a single ingredient; teriyaki usually contains at least 4 ingredients. (Soy sauce, sake, mirin, and sugar.)
WHAT DOES TERIYAKI CHICKEN TASTE LIKE?
It has a savory taste from the soy sauce yet a sweet and caramelized taste from the sugar.

    This is best way to make Teriyaki chicken sauce. Very simple. Many people over complicate ingredients and then its not turn out correct. One of most popular Teriyaki store in Seattle use Soy sauce, mirin and corn syrup.

    i wanna say thank you, because your videos especially the Tantanmen recipe video really helped me a lot! I got hooked after eating Tantanmen for the 1st time in this ramen shop i always frequented (2yrs+ ago i was not much a fan of any type of spicy food). In my case i used Bonito broth made from scratch as the broth for the Tantanmen (using bonito flakes that i have in my pantry + water) :) Truth be told i think i like the peanut butter version (which i find more nuttier in flavor as well! + more accessible as well) + you have earned a new subscriber as well!!!! + learned some new cooking technique in making chicken teriyaki as well :)

    Thank you for the question! Yes, as long as it's in the uncooked state, the mixture is essentially a mix of condiments, so you can keep it in the fridge for late use!

    Do you mean miso instead of dashi, or miso with dashi? If former, dashi here is a bonus ingredient, so you can skip it completely. If latter, you can, but you probably need to adjust the salt content by reducing the amount of soy sauce. I hope this helps!

    Cutting into it makes it cook faster. I do it that way in the grill, not thighs though, and brined.

    15 min when its that thin should be fine, but thighs are so forgiving a couple more min should be OK. Love this recipe and technique!
