Italian Chocolate Spice Cookies - Santina’s Biscotti Scuri!

These cookies are an Italian tradition, especially during the holidays and special events. They are made with cocoa, coffee, walnuts, raisins and spices which bring all the flavors together into a mouth-watering, delicious cookie! My beloved mother, Santina, used to always make huge batches of her cookies when Christmas season began. Since her passing, I keep this tradition going with my own family and wanted to share this delicious recipe of hers with you! There are many variations, but this is the one my mother perfected on her own and it was loved by many. Oh, and by the way, this delectable cookie happens to be vegan! Recipe is below. SANTINA'S BISCOTTI SCURI - (dark cookies)
Preheat oven 350° F
3 1/3 cups flour
1 tablespoon baking powder
2/3 cup shortening
1/2 cup hot coffee
1/2 cup hot water
1 1/4 cup white sugar
1/2 cup cocoa powder
1/2 teaspoon salt
1/2 teaspoon allspice
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract
1/2 cup chopped walnuts
1/2 cup coarsely chopped raisins
Icing:
1 1/2 cup confectioner's sugar
1 teaspoon vanilla extract
2-3 tablespoons water
Bake cookies in 350° oven for 10 minutes, until firm to the touch.
Makes 5 dozen cookies.

    My Italian Grandma made this also. Once you have one youll never be the same lol. Hers didnt have raisins but everything else is pretty much the same. And no pepper like alot of recipes have.

    G'day, Tina! These look and sound so yummy. I definitely want to try making them, but only a half recipe. Would you advise lining the baking sheet with parchment paper?

    Hi, Linda! These cookies are easy to remove from the cookie baking sheet, but I don’t see any reason why you can’t use parchment paper if you prefer to bake them that way. Thanks for trying out the recipe. Enjoy the cookies! :)

    Looking forward to making these. I don't have allspice what can I substitute for that? Or can I make them without the allspice and they'll taste okay?

    Hi Elaine, if you don’t have allspice, you can basically make your own. Just mix equal amounts of cinnamon, clove and nutmeg powders to total the amount of allspice the recipe calls for. For simplicity: In a small cup, mix well 1/4 tsp ground cinnamon, 1/4 tsp ground cloves, and 1/4 tsp ground nutmeg. Then use 1/2 teaspoon of the mixture for this recipe and save the rest, if you like, it won’t be much. The spices are what give this cookie its distinct flavor. Enjoy! 😀

    is there a substitute for the lard or shortening? Same amount ratio butter to shortening?

    You can substitute butter for shortening, although I can’t guarantee the outcome of these cookies will be the same. Although butter has some water in its composition vs solid shortening, it shouldn’t change the cookies’ texture too much. For instance, I’ve substituted butter for vegetable oil in a cake recipe once and it ended up drier and not as moist as it would have with the oil. Nonetheless, yes, you can use the same ratio of softened butter in this recipe as the shortening. Thanks for asking! 👍

    They may have been called that too. Different regions of Italy have their own names for this cookie. I've also heard it called Toto or Tetu.

    You forgot the black pepper. Black Pepper is the original recipe. That is what makes them !

    My only comment is that I would never use lifeless shortening in any recipe. If I tried this recipe I'd use real butter. My grandmother was from Italy and she only used butter in her cookies. They had great flavor and texture. Shortening is so unhealthy.

    Except butter will make a softer cookie. There's no way these cookies will be flavorless, despite the shortening.

    Lard is traditional! Butter makes it to soft you need a more structured cookie
