Agroittica Lombarda Group in northern Italy produces 15% of the world's caviar. The most expensive caviar produced here, Beluga, cost $5,700 per kilogram. The group is split into two companies: Ars Italica Caviar and Calvisuis Caviar. We visited Ars Italica's farm, where there are four species: Russian sturgeons, starred sturgeons, Adriatic sturgeons, and sterling sturgeons in the albino variety.

    It only tastes different if you eat it with a metal spoon and the spoon comes into contact with tongue because the spoon has a certain taste to it that makes the caviar taste different

    So the eggs are removed from the fish and run through a metal sieve to remove the egg sac connective tissue, the eggs fall through the sieve into a metal bowl. They are rinsed and passed between various metal bowls before ending up in a metal bowl and having salt added. The salt is stirred in using a large metal spoon. The eggs are then packaged into metal containers by being spooned out using a metal spoon. Once they are served you have to eat it from a special spoon made of bone because a metal spoon might contaminate the flavour. Did I miss something?

    This is an excellent point. I am a cook and have seen some chefs use metal spoons and others insisting one using plastic spoons for plating caviar. Perhaps it has to do with the type of metal? The containers are usually brass lined tins and the bowls the used in the factory are stainless. In fancy restaurants they often use cutlery made from precious metals like silver, which and react with certain foods. Maybe this is the reason?Also caviar is a premium product and the exclusive spoon is part of the packaging. Or maybe the caviar people are in cahoots with the mother of pearl people lol... Personally I like to use caviar for my dishes when I can get it. I usually use stainless steel spoons for plating and I haven't had a problem yet.

    @@ONTHEPASSWITHMAX From what I remember about a video on a close topic, since you can only taste and smell particles, stainless steel (and most metallic products) should be tasteless, but they can react to lipids from oil and sweat on our skin to create something that tastes in fact metal-y (looked it-up, it's the oct-1-en-3-one), maybe a start of answer. (the video was about bottles vs cans, short answer is cans are tasteless if they don't start to oxide, which will happen over time/handling and can seamer quality/deterioration)

    Yes. Sturgeons are endangered. As the video mentions quite clearly, wild caviar trade is banned. These companies are farming their own Sturgeons and extracting caviar from them. They're not catching them from the wild. Sustainable farming lets the wild population have a chance to repopulate, while people can still enjoy caviar.

    KiwiFerret - they massage the eggs out of the belly after inducing labour with a protein. The problem is you can only do this when the eggs have matured more than normal, which has a negative impact on the quality.

    @@JuniperJennifer666 unfortunately no-kill extraction is very rare - due to the inconsistency in quality/ expensive processing needed after that. We can hope that the no-kill methods are improved over the time.

    Never imagined that the biggest farm of caviar could be in Italy. Caviar is completely uncommon in Italy and ordinary markets doesn't sell it. Lump fish eggs are more common ("uova di lompo") as a substitute of the caviar but anyway are not a cheap food.

Americans don’t usually grow up with caviar because of how expensive it is and therefore do not acquire a taste for it. And what food in your opinion is less expensive and tastier?     @array s That's the real problem, not the tin container. Using a metal spoon will cause polarity shifts (small-scale) as well as small tears on the egg casing. Can also charge ions, which reduces flavor. They should use silicon. -- A chemist.

    I would think that with it being that expensive, they would come up with a way to remove the eggs and let them keep making more eggs. It takes 20 years for the Beluga to make the eggs the first time, and then they spawn every 5 years or so after, if they could come up with something to do it they wouldn't have to invest 20 years for 1 harvest.

    I mean, after a certain number of cycles, it will be on going production with no pause so doesn't really matter in the end but there are some companies that already practice non lethal harvest methods. Whether it is more humane to kill the fish rather than letting it go traumatic experience is upto debate.

    There ARE methods now, and its use is now much more common. It didn't catch on for a while because it involved hormonal injections, which had people worried because they feared it could harm the surgeon or the eggs. It took a while to be sure that everything was safe since sturgeons are endangered, so you can't just willy-nilly test it out, but now everything's been green-lighted and it's 100% safe with no cost to quality, so it's catching on FAST. Which is good because it allows more sturgeons to live for longer.

    It's expensive mostly because it's a very unique taste, hard to replicate and also because it's simply rare. Like saffron, it costs a lot outside of Italy because it's rarer, in Italy it doesn't cost quite as much. A lot of people bash it because they think it's posh food that doesn't taste like anything and gets eaten by rich people just to act cool, but if it was available everywhere and at a low price many would love it and use it.

    Have you ever tried putting a spoon in your mouth by itself? It has a distinctive 'metal' taste. The metal doesn't mess with the chemistry of the fish eggs, it's just a bad utensil to eat caviar with because you might taste the metal while you taste the caviar. Still a poor wording choice on the part of the video though, since it implies that there's some sort of chemical reaction going on (which isn't true).

    What they mean by that is "having a metal spoon in your mouth at the same time as the caviar could alter the way you perceive the taste." Just being in contact with metal doesn't change the taste, but having a metal spoon that tastes like metal in your mouth at the same time would in fact make you taste metal at the same time as the caviar, which is unpleasant.

    "...metal can alter the taste of caviar..." Its too late. Extracted via metal knife, separated on a metal grate, placed into a metal mixing bowl, mixed with a metal spoon and packaged in metal container.

    The knife doesn't touch the eggs just the sack and even if it does not long enough to matter. The separating plate is coated it's not bare metal. All caviar containers are gold plated. The only point that they are in steal is stainless and your whole argument is made invalid by the fact that none of this has to do with what you taste when you eat it at the table. It doesn't leave flavor on it. Your tongue is very good at tasting things and it will taste the metal spoon in your mouth before the caviar. This is when you taste metal. Good Day Sir.

    As Daniel Naz explains, they talk about the taste of the spoon in your mouth. Metal does not affect the taste of the caviar itself of course...

    Try putting a spoon in your mouth. Tastes like metal, right? What they're meaning there is that having the metal spoon in your mouth at the same time as the caviar could mess with how you perceive the taste of it. They're not saying that metal chemically alters the caviar or anything like that. It's a poor wording choice on their part, though.

    I hate their wording there because it makes it seem like metal changes the chemistry of caviar just by touching it or something. That's not true at all. What they meant is that the metal flavor you get from licking a normal metal spoon clashes with the flavor of caviar, so you should use a utensil with no flavor of its own. But what they didn't say is that plastic spoons work just fine too!

    Wait. What? 4:42 doesn't the worker used a metal spoon? But..but... 6:57 mentioned "The right way to taste caviar is to either use your hands or if you would like to use cutlery, with spoon made from mother-of-pearl or bone, because metal could alter caviar's natural taste".
