The reason why you couldn't get the syrup to be all string-like could be because it wasn't at the right temperature. There are different stages that the sugar syrup goes through in certain conditions. Just google "temperatures of sugar syrup" to find this. Also spinning the tanghulu like that can actually be very dangerous since the sugar is so hot, so pls be careful.🥲
