Having dry aged a brisket, the trimmings are amazing when stewed into chili. With the buffalo sauce, it could only be better.

Years! I did a frozen steak video recently and after 2 years I didn't notice any difference. Key is making sure the seal is intact.

Hey Max what if you took the bourbon and maple syrup and let it come to a simmer on the stove and then inject it into the meat. It should have more of a caramelized flavor. I really like your experiments.

While this is entertaining, I wonder what is the risk of bacteria growth. I thought the dry age is "safe" because we don't introduce bacteria inside the meat. (Similar to how you could have issue with under cooking meat that has been tenderized with needles).
