I Soaked Steaks for 24 hours THEN Dry Aged Them
When it comes to dry aging, the possibilities are endless. Whether it’s beef, pork, fish or really any other protein, the process can lead to delicious results. Adding ingredients to the protein before putting them in the dry ager is something I’ve experimented with as well.
The biggest problem is that dry aging takes time. A LOT of time. Unlike regular recipe testing, we have to wait at least 30 days to see if the experiment was worth it. This makes it challenging but also really exciting when it’s time to finally taste them. I had no idea if soaking these roasts for 24 hours would be delicious or even edible for that matter. I have to say I was blown away with the results!

I had a good friend of mine working on my sink one day. He heard about my cooking so I gave him a New York Strip seared with wine and butter. Sided with Brussels and authentic campfire style potatoes. I never imagined soaking a whole roast within the wine. Love the video and how it came out!

I've soaked steaks in wine useing two methods. If you just put your cuts in a ziplock or vacuum bags filled with wine and you get the same effect that you would submerging it in a large container. Practically the same but a lot less wine so you can get away with useing better wines. I love useing current wine, it's sweet an amazing and turns the meat purple/pink. I love useing them to make violet-pink heart shaped steaks for Valentine's Day.

Nice experiment👌 For coffee I'd consider a cold brew that I liked and soak in a brine bag to reduce the volume needed. Hot coffee gets a bad flavor after a few hours cold. It's not fresh.

You can use a lot less liquid if you immerse using a bag as a container. Makes it much more economical.

The closest I've ever come to doing anything like this is brining a whole chicken for 24 hours and using pomegranate juice as my liquid. I definitely recommend it. What I would like to see is the difference between fresh, homemade bacon and bacon made with a dry aged pork belly. Maybe 45 days.

Let's go with the proper brown caffeinated liquid: tea. In particular, go with the lapsang souchong variety. Opening a bag of LS smells like opening a bag of jerky. I've marinaded pork chops in LS to great success.

I've been doing AAA - 28 days aged Prime Rib roast soaked in red wine for 24 hrs for decades, it's my go to method to really impress and win the unspoken competition we all have with our friends when it's time to take the gloves off to make a statement....lol It gives the roast a taste of Boeuf Bourguignon and has to be cooked perfectly to a medium rare center and medium pink ends, if need be for those who don't like medium rare. Served with the right side dishes, it's a slayer of taste, hard to beat by any means. Marinade your roast for 24 hrs in red wine (I like a inexpensive french Burgundy) but any red wine will do. Then I spice it up with Grill Montreal Steak spice, which you have no need to add salt and pepper to your roast if you use this spice. Add some fresh garlic cloves and small cherry sized onions and butter with a fige of Thyme and cook it to your leisure or method of choice. The roast will be sensational no matter the method because the special ingredient is the red wine, just as long as you don't over cook your roast. This is not a secret recipe but rather a sure bet to make your diner above other dishes. A sure way to have your friends look at you and go, "yeah he's got this one down to a science". There's many ways to make a great Prime Rib roast and marinating it in red wine for 24 hrs, is a sure bet no matter what you do to change it up. I've never tried Coffee or Whiskey, so I couldn't say anything on those, but 24hrs red wine + rib-eye steaks and/or prime rib roasts = hell yeah! The taste and tenderness is off the charts!

Purple cow, a childhood favorite. Haven’t had one in over 30 years…
The idea for the wine one reminds me of how salami is made
My great Aunt owned a drive-in soda and ice cream shop that made their own ice cream, as well as burgers and plate lunches. The ingredients were almost all local. So I get experience with Purple Cows, Black Cows, Brown Cows, White Cows, Black & Whites, Black Golds, Malts, etc. A "Cow" is traditionally a ice cream float, though there are a few ones like a Black & White which could be a float or a soda. Anyone wondering, a B&W float is chocolate syrup and vanilla ice cream with cream soda or while the soda is a 50/50 blend of a dark and clear cola (Coke and Sprite are the traditional). I still drink Black Golds, since they are easy to make. It is a 1:2 or 1:3 ratio mixture of Coke and DP, which balances out the flavors in a beautiful way. Recommend everyone try one the next time they are at a place that lets you pour your own fountain drink that has both.
