Anything other than salt is a waste of money, since it's the only thing that penetrates into the meat and salt is the basic reason for brining. It helps the turkey retain moisture, that plus not overcooking. Use an instant read thermometer and never depend on those pop up things.

Nope. If you do it properly, it is not unsafe. I do a wet brine for 72 hours roughly. Pick up my bird on Monday afternoon/evening and it will go in the brine when I get home and it goes on the smoker Thanksgiving morning. It's fully submerged in liquid. Done many turkeys and chickens this way.

Because you had to do 1000 things to it to make it edible. Pork chicken beef way LESS prep and way better. Juice ain’t worth the squeeze. Turkey = once annually.
