Smoked Turkey Recipe | How To Smoke a Whole Turkey

Smoked Turkey Recipe
Once you try a smoked turkey, you'll never cook turkey any other way.
You want to buy a 10-12lb Turkeys because this size turkey cooks evenly throughout the breast and thighs on the smoker. It takes several days to thaw a 12lb turkey, so you'll need to plan in advance.
Once you have the turkey thawed, it's time for the brine. I brine my turkeys for 24 hours.
Turkey Brine Recipe:
- 2 gallons of tap water
- 1 cup Brown Sugar
- 1 cup Molasses
- 1 cup Honey
- 1 ½ cup Salt
- ¼ cup The BBQ Rub www.killerhogs.com/shop.html
- 3-4 Bay Leaves
- Fresh Thyme Bundle
- 1 TBS Whole Peppercorns
In a large stock pot bring 1 gallon of water to a boil and add the brown sugar, molasses, honey, bbq rub, and bay leaves. Once the ingredients have dissolved turn off the heat and allow the mixture to cool. I make this the night before and refrigerate until time to brine.
Place the turkey inside a bag and pour in the brine. Add the thyme bundle and peppercorns. Top the turkey off with an additional gallon of water and the entire bird should be covered. Close the bag and lay a bag of ice on top. Let the turkey soak for 24 hours replacing the ice as needed.
The next day remove the turkey from the brine and rinse under cool water. Allow it to drain and pat off any excess water with paper towels. Cut a couple apples in half and stuff in the cavity. I also add onion and celery. This will add mass to the turkey helping it cook even and gives it some additional flavor.
Smoked Turkey Seasoning:
- 1 cup Kosher Salt
- 1 cup Granulated Garlic
- 1 TBS Poultry Seasoning
First spray the outside of the turkey with cooking spray. Apply the seasoning mix to the outside making sure to cover everything; then apply a light layer of The BBQ Rub. www.killerhogs.com/shop.html
The next step is to inject the turkey. You can use a store bought injection like Tony's Creole Butter, but I created my own version.
Smoked Turkey Butter Injection
- 1 stick real butter
- 1 cup chicken broth
- 1 TBS Hot Sauce
- 1 tea Granulated Garlic
- 1 tea Cajun Seasoning (I used Louisanna brand)
Melt the butter in a sauce pan and add the chicken broth, hot sauce, garlic, and Cajun seasoning. Whisk the ingredients together and remove from heat once incorporated. It doesn't need to come to a boil.
Let the injection cool and shoot it into the turkey. Hit the breast in 3-4 locations on each side and do the same for the legs and thighs. Before placing the turkey on the smoker, use butcher twine to secure the legs and wings.
Now the turkey is finally ready for the cooker. I smoke turkeys at temps between 275-300 degrees. Higher temps make for a better bird. The outer skin turns a beautiful mahogany color and is almost crispy. For smoke, I use pecan or a fruit wood like cherry. You can over-smoke turkey, so go easy on the wood. Place the turkey on the smoker and set a timer for 1 ½ hours. As long as you maintain temps, there's not much to do, just let it cook.
When the timer goes off, rotate the turkey on the rack to ensure it is cooking evenly on all sides. I never flip the turkey. It stays on the back, breast up, the entire cook. It takes about 3 ½ hours to smoke a 10-12lb turkey but checking the internal temps is key. It has to hit at least 165 in the breast and 175 in the thigh. When you stick the turkey, juices should run out clear. There should be no trace of blood or pink colored liquid. I start checking the internal about the 2 ½ hour mark just to see where it is. At this point if the outside is starting to get dark, I'll lay a piece of aluminum foil over it. The foil acts as a tent and will prevent the skin from browning any further.
Once I see a temp of 165 in the thickest part of the breast and the juices are running clear out of the thigh (175 internal), the turkey is done....Almost....you want to let it rest for at least 15 minutes before carving. If you go at it too soon with the knife, all of the juices will run out onto your cutting board and you'll have dry turkey. Be patient and let things cool off for a few minutes.
Once you try Smoked Turkey you won't be able to stomach oven cooked bird.

    4 years ago was when I discovered this recipe, my girlfriends kids went to their fathers after our Thanksgiving. They told their father that my Turkey was way better than his.     @@henryalcocer5127 No. It'll take longer to cook. I generally use a 16lb or so. Haven't had any problems. I injected it a bit more than he did because of the size. It takes mine about an extra 2 hours, do keep that in mind. You won't regret any of Malcolm's recipes. I've done numerous ones that he has and they all come out great. Good luck to you...

    Well, you try one of his recipes and you instantly trust him, because the result is incredible. For me it was the smoked baby back ribs. I had a new Traeger, and Malcom guided me through to BBQ nirvana. Very, very easy to trust a guy like that.

    I have a small weber smokey moutain, i used a water pan which i refilled twice with 32oz. of warm water. 12.7lb turkey came out delicious after 3.5 hrs ~250 degrees.

    I did my first smoked turkey yesterday 7-27-17 and it was the best turkey I had ever had. My family loved it and told me that whatever I did with this turkey to do it from now on. Even my 3 year old said it was delicious. I followed the recipe to the tee with the exception of the wood. Unfortunately here in the mid west is hard to find oak so I did it with hickory.     Got mine on the smoker now. I’m doing 195-200 over night in a 21lber . Extra low an slow. Then I’m going to up the temp in morning to finish off if need be. This guy is awesome, I follow all his videos when it comes to smoking. Happy thanksgiving to everyone!!

    Followed this recipe and it came out amazing. I have a Pit Boss Austin XL. I set it to 300 degrees and our 15lb turkey cooked for 3 hours. When it reached 167 degrees I pulled it and let it rest. I used your injector that I bought and made up a creole butter injection, used your seasonings, injected it and smoked it on my Weber Smokey Mountain and it turned out awesome.     Man I did too and it was killer! It took me a hell of a lot longer than 4 hours to get mine up to temp though, at 300 degrees. I think I went nearly 6 hours on a 12 Lb bird and it still wasnt 100 percent done. Little salmonella never hurt anybody. Xsept grandpa. RIP

    I used your recipe this Thanksgiving. It was a huge hit. My wife kept sneaking pieces off the bird. It was so tender and juicy. I used my Weber Gold. My mother-in-law thought I was crazy to cook a turkey on the grill. But now she wants me to cook the turkey for every holiday and I mean every holiday. Great recipe Malcom. The turkey went so fast I didn't get a chance to take any pictures but I will this Christmas. It has already been told to me that it is a must have dish. Everyone wants to watch me cook this. I told them go to HowToBBQRight Malcom Reed. I did say this turkey was done Killer Hog Style!!!!!! The hardest part was keeping the temperature. Other than that it was super simple. The only thing I did different was I added some flavored butter under the skin over the breast I also cooked it in a roasting pan to protect my bird from the heat. The gravy juice it produced was amazing. A little chicken broth for moisture and some onion, carrots, and celery in the pan caught all the goodness from the turkey. Thanks again for this one.     I purchased a pellet smoker (Grilla) about 2 years ago and attended 2 different BBQ and smoking workshops. But the best information and recipes I have learned are right here, from Malcom. I experimented with different rib and brisket recipes, but when I followed the instructions from Malcom my freinds and neighbors raved. So, I finally had the opportunity to try smoking a turkey. Went to my go to guide and followed this instruction and Voila! First attempt and it was the best turkey we have ever had. Better than oven (and it now frees that up for other things come Thanksgiving) and better (easier and safer) than frying one. Thank you Malcom for your spot on, great recipes and videos!

    As Thanksgiving approaches, I’m reviewing this video. Only smoking a turkey once a year, this helps me remember the steps. I follow Malcom in Facebook. He posts good stuff, doesn’t send out spam. He also responded to a direct message within a day. Seems like a very nice guy!!!

    Smoked a Turkey today for Thanksgiving on my wood smoker using Mesquite and Cherry wood following your recipe! Came out excellent and they were picking at the bones to get every little piece they could! Everybody was saying how good it was and sister in law said it was the best Turkey she ever ate in her life! They wanted me to fry one again but glad I smoked it!     Love this guy... used his advice for my first pork butt and it turned out AWESOME! I was even asked to make some for a wedding anniversay. We are having a potluck at work and I said I would smoke a turkey haven't done one in about 6 years and I just threw it on the smoker will be trying the brine for sure.

    Hey Malcolm!! I have used this recipe for the past 6 years for my family get together at Thanksgiving and it has always been awesome! I used to have a Weber Summit, which I had used successfully for every thanksgiving. However it died after 13 years of use.     That's the truth right there. Its several straight days of preparing the brine,letting it soak,shopping for all your ingredients,cutting up the fruits and veggies to stuff it with,pulling the bird out of the brine to prepare it for the smoker by rubbing it down and injecting it, getting the smoker up to temp, putting the bird on and keeping s watchful eye on it,basting it and covering with foil when it gets to the perfect darkness........its many hours of labor just for others to grab a plate and throw some of your awesome turkey on it and devour it in seconds!
