    As a Vietnamese I have a smol advice: You can just use your finger to spread a little water on the rice paper's surface, don't need to dip it in water. Your recipe is right and so close to how we make spring rolls, love ittt

    I like the origin of this spring rolls, learned it from my friends mom from Laos Vietnam. I just miss the nuoc nam fishsauce and the dip sauce with garlic, chillis, sugar, lime juice and water, for me without it missing out half of the recipe!

    👍👍 Finally! So glad to see a video of a Vietnamese cook using Vietnamese rice paper ((Bánh Tráng) and not the Chinese spring roll or Chinese wonton wrapper to make Vietnamese egg rolls. Some cooks use the Chinese spring wrapper to make so-called Vietnamese egg rolls. Chinese roll wrapper is way too coarse, is way too thick compared to Vietnamese rice paper (Bánh Tráng). The Chinese wrapper makes Vietnamese egg roll taste like the oily Chinese roll --- ew.

    I reckon this could be the recipe that I have been looking for. My mum used to buy "nehms" from a vietnamese lady at the market of Dakar Senegal. Just the smell as we approached her stall was enough. That was 30 years ago. I am going to try this recipient and follow u to see if per adventure u have the other recipes she used to make. Thanks.

    Keith Clarson It looks like a simple “Vietnamese fish sauce.” If you google or KZread it you can get exact measurements, but my family usually makes it with: water, fish sauce, sugar, and lime! Add Thai chilies in and garlic if you wish!

    no you can't simply because the ricepaper is gonna dry up in the fridge and become hard. the way to go is to fry them halfway and then store them in the fridge/freezer. and then refry when ready to serve. but you can store the filling in the fridge and roll them up the next day if that's what you meant.

    You can toast them in the oven for 10-12 min (or until desired crunchiness) @350 degree

    I can't believe how oily these crispy spring rolls are. I tried different frying methods and it still come out oily. And they do get soggy pretty quick. I love the recipe. I'm going to try to put them in a air fry and see how that turns out.

    This time I cooked it...and they all clumped together--sticky. If they touched, they stuck together. Then, I took them out to cool before a second fry and they became one massive clump. I ended up frying it as a huge clump...and using it in "Bun Kho" where appearances don't matter so much. What did I do wrong?

    Sounds like your oil isn't hot enough. The more spring rolls you put in the more the temperature of the oil goes down. If the oil is hot enough when you drop it in, it should form a crisp crust pretty quickly and prevent sticking.

    It's the fish sauce that's salty. I was surprised too that there was fish sauce and salt. I was going to make them tomorrow so thanks for the comment. I'll leave the salt out.
