    this is just how my Mexican mother and grandmother made enchilada sauce except they used chicken broth instead of water. I'm not able to ask them how to do it, so I searched for a video that would be like their method. I've looked thru a few videos and yours is just how they did it. I remembered as I watched... I couldn't remember when the flour came into the process but this video helped me remember. THX!

    Been looking for some good Tex-Mex sauce and Ima give this one a go. Do yourself a favor and fry the corn tortillas in oil for 30 seconds before you make your enchiladas. It adds a ton of flavor and that’s how most restaurants do it.

    I was looking for an old school restaurant style flavor and this is a great Tex-Mex sauce! I added a teaspoon of low sodium Knorr bullion powder and half a pkg of Sazón coriander annatto for just a little kick! Thank you!❤️👍🏽

    Great question. The only difference between self rising and regular flour is the addition of baking powder and salt. Many Allrecipes member used all purpose flour in this recipe with great success. Be sure to season with salt to taste. Enjoy!

    I was wondering the exact same thing. The Baking Powder is heat-activated and creates carbon dioxide, which creates the lift when you bake. In this recipe, the flour is made into a roux and the heat will negate the benefit of the baking powder.

    Thank you for your question, Brett. Cumin powder is made from grinding up cumin seeds. This spices is often used in Mexican cooking.

    This recipe is so easy and I love the orange sauce you see in authentic Mexican restaurants. It make must be the white flour and oil that lightens up the red chili powder. Yum.

    Good basic recipe. Try these variations: Use chicken broth instead of water. Or, use beer instead of water. Bump up the garlic to one generous tablespoon. Use tomato sauce with minced jalapeno peppers already in it. Add a teaspoon of brown sugar to the sauce. Combine any of these variations - and enjoy! I hope this helps.

    I just used it and my enchiladas were outstanding! It's a great recipe and easy to make. There may be better recipes for this sauce, somewhere, but I haven't found any, and it beats anything you can buy in a can.

    Boil dry chilies with tomato, oregano, garlic, and chicken bouillon. Blend all ingredients and add the liquid until the texture is how you like it strain and your done. More authentic and taste better.

    Just made this. In fact my enchiladas are in the oven right now. I used onion powder, because I didn't have onion salt and I used plain flour, instead of self rising. It's so good! I'll never buy the canned stuff again. It makes enough for a decent size pan, double the recipe if you want more than one pan. :)

    Another suggestion after frying the tortilla for 30 seconds, set it inside the enchilada sauce and submerge it for about a minute, remove the tortilla with a spatula, set it in a baking dish, add your cheese or chicken or whatever you're using then roll using, maybe, a couple of forks. I'm gonna try your enchilada sauce with chilaquiles today. But instead of just plain water, I think I may add Knorr's chicken flavored bouillon, 1 tsp per cup of water. When sauce is done, taste before adding any salt. Happy cooking!

    Let's take this for what it is, this is a tex-mex recipe, sometimes I like enchiladas verdes or rojas(authentic), sometimes I like these. I like to change up and even make Indian Mexican. 😊 Nothing wrong with variety.

    Oh my god that chili powder roux made my whole house smell mouthwatering. Actually I think I'll never buy the sauce again, this was so good. I used a 15 oz can of tomato sauce, some bouillon, paprika, pepper, the chili powder and flour roux and some chef merito carne asada seasoning. It made a whole lot, too.

    Dip the corn tortillas in hot oil to soften them up a little and than dip them in the sauce before rolling them works good every time.

    Ingredients: ¼ cup vegetable oil ¼ cup New Mexico or California chili powder 2 tablespoons self-rising flour 1 ½ cups water 1 (8 ounce) can tomato sauce ¼ teaspoon ground cumin ¼ teaspoon garlic powder ¼ teaspoon onion salt salt to taste Directions: Step 1 Heat oil in a skillet over medium-high heat. Stir in chili powder and flour, reduce heat to medium, and cook until fragrant and deepened in color, stirring constantly to prevent the flour from burning, about 1 minute. Step 2 Gradually stir in water, tomato sauce, cumin, garlic powder, and onion salt until smooth. Continue cooking over medium heat until thickened slightly, about 10 minutes. Season with salt.

    This is the way i was taught growing up in the kitchen except we would use chicken boullion in the water. onion powder then add some sharp cheddar into the sauce until fully melted.

    Sounds delicious! And I agree, there is a huge difference when using New Mexico chili powder. Have you ever used browned flour? It gives the sauce a wonderful nutty flavor.

    The recipe will not pull up anymore, but here is what I got from watching the video.. 1/4 cup oil 2 tbsp self rising flour 1/4 cup chili powder 8oz can tomato sauce 1.5 cups water 1/4 tsp cumin powder 1/4 tsp garlic powder 1/4 tsp onion salt

    Do not add the water if you want a really strong flavor. The first time I made this, I forgot the water and the taste was AMAZING. I added water in the second time, and it was good but not to the same degree. Experiment and see which one you like better

    I do or did I can of tomato paste three red sweet peppers about a small container of chili powder a bit of cumin a bit of coriander powder oregano Chad the onion garlic chocolate powder three bullion cubes chicken A small dash of cayenne pepper and of course water I didn’t need to use any flour

    Are you looking for a gluten-free flour alternative, Crystal L? If yes, use arrowroot flour mixed with rice flour as a wheat flour substitute. Arrowroot is primarily used as a thickener, so it needs to be mixed with something to substitute for flour.
