Hello & welcome to the Views Kitchen! In today's recipe, we will be showing you how to cut a corner using chili powder to make your enchiladas. This easy-baked enchilada recipe has been a staple in our family and I'm pleased to share my mother's recipe with you. ---Yes, it's obvious that this is not the traditional nor the authentic way of making enchiladas. I learned this recipe from my Mexican mother and so I'm grateful she made it comfortable for our home. Now I don't have to eat cold enchiladas LOL Not to worry we know how to make the authentic version as well.

Ingredients:
Water
Chili Powder (Views Chili Powder- • How to make Chili Powd... )
Knorr Chicken Bouillion
Tomato sauce
Corn Tortillas
Cheese (I used Mexican Blend)
Chicken
Onion
Lettuce
Sour cream or cream fresca
Queso Fresco or panela (Optional)
Chili Sauce:
1/2 Cup Chili Powder
3-4 Cups Water
1/2 Can Tomato Sauce (I used Hunts)
2 1/2 Teaspoons of Knorr Chicken Bouillion (Please adjust to your liking- Start with 1 1/2 Teaspoons the add slowly)
This amount of chili is good for up to 5-6 cups of water. Cook the chili for about 10 minutes on medium-low. Keep it on a low or simmer heat until ready to assemble the enchiladas
* Please make sure to cook the chili in oil for about 1-2 minutes on low heat before you add the water
* You may use fresh chicken broth instead of knorr chicken bouillon and water blend (The can of chicken broth might not give the flavor needed)
Chicken:
Cover your chicken with water. Add half a yellow or white onion and 1/4 of salt. Boil for 30-40 Minutes. Then you can begin to shred the chicken.
I used chicken and half cup fresh white onion for the filling of the tortilla
Bake at 380 degrees for 30-40 minutes
I baked the enchiladas for 20 minutes covered with foil. After 20 minutes I took the foil off and baked for another 10 minutes. The cook time will depend on your oven.
Tortillas:
The tortillas I used are made fresh at my local Mexican market. I think Mission will hold well. Use what you have available.
I serve with a side of Mexican rice and beans. I topped the enchiladas with lettuce, green onions, creama fresca, and panela cheese.

We fry the tortillas in oil for 10 seconds before dipping them into the red sauce. Makes all the difference in the world. I’m from San Antonio, Texas. 😉

Yep, a quick fry holds the tortilla together preventing them from getting mushy and intensifies the flavor of the tortillas

I love watching your videos. I can't believe someone would be offended that your husband had his shirt off LOL. It's real life in someone's home with their family including children, pets, and shirtless husbands :-) I would much rather feel like I'm in your kitchen just like a friend than someone being fake and putting on a show. "It fills my soul." I grew up in So Cali in the 60's and 70's. I am a redheaded Irish Catholic girl. All of my friends were Catholic Hispanic. I was the odd girl out who was made to be member of their sisterhood. This cooking I grew up on as well as, my mom's corned beef. BTW she is still with me and just turned 90. You are carrying on the recipes of your grandma, mother, sister, aunts, etc. Bless you for what you do.

I made about a dozen corn tortillas,two whole wheat and 4 flour. I didn't even get close to your recipe as it was my first time and let me say everybody in my home loved the enchiladas said it was the best they ever had. Omg! Just tried this recipe for dinner... I was craving enchiladas and wanted to give my mom a break from cooking dinner. I love enchiladas! Unfortunately my tummy doesn't like spicy/hot foods. So I use a method my grandma taught me to tone down the spiciness. Now, I can enjoy enchiladas again. 😋 I just mix equal amounts of enchilada sauce and beef gravy. It still tastes amazing, but doesn't upset my tummy. Edit: I also like black olives, and green onions on mine. 😆
I’m glad she stayed completely focused in the beginning, on the step process for cooking the Chile powder and how critical it was, (except for the conversation she had with the child.) Still not a bad video...can’t wait to try it.

You just came across my KZread home & I clicked, glad I did. Loving how you heat the tortillas without any oil that is a make or break for me on how I prepare dishes. I’m trying to teach my baby sons’ how to grind comino seeds in a molcajete. I ask my hubby if he would like sour cream or glue (Crema Mexicana) on his tacos or tortas...I love cooking and fusing two cultures of food together at times we have had mole and etouffee together and it’s amazing how wonderful tortillas taste with etouffee. That is so much easier then I thought. A trick my grandma taught me with shredding the chicken is to use a hand mixer with just one beater. It shreds it beautifully. This is a must try. Thank you for sharing.

This is my first time on your channel. I just happen to see the picture of you holding the tray of enchiladas and my mouth started watering right away. You took me over the edge with that sauce that you made. I make wonderful enchiladas but I use the store bought enchilada sauce and I am not happy with it because it has changed over the years. Other than the sauce, I make my enchiladas just like you make yours. I am going to try this. I have a feeling it will be my new way of making enchiladas. Thank you for sharing your recipe with us.
When I was about 25 I worked for a woman named Nana Ruiz, she was in her 80's, she ran a restaurant in San Luis Obispo, she would heat the enchilada sauce in a shallow pan coat the tortilla swiftly fill it and then serve with a garnish. Years later I did the same and made 3 dozen, it was a quick way to coat the tortilla and soften them quickly, then repeatedly adding more sauce for each one... just a tip you might want to try . Thank for your charming personality and generous spirit I enjoy watching you cook and can't wait to make some beans!
O my god I love enchiladas. Thanks for the recipe and teaching this Puerto Rican how to cook enchiladas. I will admit that I am a bit intimidated making the enchilada sauce but I think it will make a huge difference instead of can store bought enchilada sauce.

Just made these this morning! Amazing! I didn’t use the chili powder you use, I used a different brand, still came out delicious!! Will never make my old way again. And the homademade tortillas really change the flavor! Love it!
Thank you For the help making the sauce! just needed to learn that part. For anyone watching, im sure someone has thought of this already but i figured i'd try an idea out and made " jalapeno, beef, cream cheese stuffed enchiladas " with mozzarella and taco blend cheese sprinkled on top. yall should definitely try it. I think it is one of my new favorite recipes. I also added a whole red jalapeno sliced in 4 pieces with the seed into the sauce while simmering and hunts diced tomatoes. The filling also had mushrooms, onion, tomato, green bell pepper and one red jalapeno cooked separately in a pan then added to the meat half way through cooking then cooked further before stuffing the enchiladas and one half asparagus spear in the center. but i dont think anyone wants to do all that. Seasoned the sauce and meat with garlic powder, onion powder, chilli powder chilli mix seasoning fresh black pepper and ground salt. Also just a smidge of season all. I cant eat gluten so i thought i'd try that out since most pre made gluten free stuff kinda sucks. So i gotta get creative when i cook.

@@jackipalmer5680 i used deep glass baking safe dish as the receptacle and as for the filling it was a bit messy but after dipping your corn tortillas in the sauce you add a small amount of the meat with a spoon, then i sliced 2, maybe quarter inch thick chunks of cream cheese from the smaller side of a block of cream cheese and placed them end to end in the tortilla. but if your using the tub you could probably spread a healthy amount on the tortilla then add the meat veggie mixture, and extra diced jalapenos ( optional ) with a spoon and the spear of asparagus last ( if using asparagus) and carefully roll the tortilla closed and set fold down so that it wont open up on its self when you place in the pan. Then once the pan is full i added more of the meat veggie jalapeno mix on top of the enchiladas then added the sauce on top and finished by covering with shredded cheese. Thank you so much for the recipe. I could not find the chili you used, so used what I had, and let me tell you, WOW! This recipe turned out so great! My husband who grew up with this kind of cooking said his grandma would have been proud of me. I told him it wasn't me, it was you! All you! He told me I can cook anything you post!
