HELLO TO ONE OF THE BEST BAKES EVER 😍🙌 Honestly, school cake is one of the most classic and best bakes in the world, and it’s super super simple. Some people call it tottenham cake, some people call it sprinkle cake, but whatever you call it… we can agree it’s epic right?! 😏🤤
Recipe
Cake
■ 400g unsalted butter
■ 400g caster sugar
■ 7-8 eggs
■ 400g self raising flour
■ 1 tsp vanilla extract
Icing
■ 500g icing sugar
■ 4-5tbsp water
■ Rainbow sprinkles

    @@JanesPatisseriehi Jane. You mixed the flour and eggs together. Does that not ruin the air you whipped into the butter mix? How can we avoid over mixing with this method please? Thank you

    I’m making a football pitch cake for my sons birthday and every recipe I’ve tried for a basic sponge hasn’t worked when I try to double the ingredients (either too moist or too crumbly) so I’m going to try this instead as I have the exact same tin size, wish me luck!

    Absolutely love School Cake (I think it's called Old School Cake in Scotland?) definitely has to be served with custard, only 'right' way to serve it in my humble opinion.

    Yes, it is! It's always best to chill a sponge before carving to make it even easier x

    I love making this cake. Always make for the birthdays but put a spot of milk in the sponge. But the only problem is can never get the icing as perfect as this. Any tips. Thanks :) xx

    The icing is so simple though. I use milk instead of water. What goes wrong with yours?

    Ah yay!! What do you mean by the icing isn't as perfect? I'm assuming you mean it's thinner so try and really really beat in the water (I wouldn't recommend milk as that means you need to store the cake in the fridge so the cake will dry out), before adding any more to make it thick! x

    Alternatively you can crumple the baking paper up for it to lose its 'shape' and then just set it into tray. Should fit nicely ☺️

    I made this yesterday to your recipe and found it to be far too fatty and to much ingredients, I used to the same size tin and wasn’t as happy as I was hoping to be 😢
