How to Make Mochi with a Stand Mixer スタンドミキサーで餅つき

Make fresh homemade mochi using a stand mixer! Stuff the mochi with your favorite filling, dip in a savory or sweet coating, or enjoy in Japanese New Year Soup and red bean soup.

INGREDIENTS
450 g glutinous rice (sweet rice, mochigome) (= 3 rice measuring cups or 540 ml)
400 ml water (It should be 3 cup line for Sweet Rice in rice cooker bowl)
- Anko Mochi -
red bean paste (anko) (See Notes for homemade recipe)
- Kinako Mochi -
2 Tbsp Kinako (soybean flour) This makes 2 mochi balls. If you're making more, follow the ratio of 2 parts kinako: 1 part sugar)
1 Tbsp Sugar

    You need Minerals.. 1000 mg of Magnesiym works wonders for me.. they stay away as long as I take them every other day or so.. every day stops my hubby from twitching all night ling.. 100% works for us.

    It's also add that if you use a very famous brand (KA) , the tilt head versions have nylon gears, so use small batches because the stickiness uses a lot of torque and you can strip your gears. If you have the bowl raise versions, they have all metal innerads, but let your mixer rest every now and then, even though they have thermal circuit breakers, it's good to give it a little rest now and then

    @Educated Melanin it's true about Kitchenaid, but all their models are not created equal and they're not properly classified. The Pro model is made cheaper than the Artisan. Which is strange but the Kitchenaid Artisan is definitely their best model even though they make it seem otherwise. It's sturdier, it doesn't break as often, there are less returns in stores, and it is stronger than the Classic model which doesn't have enough power.

    @@alexisgs8800 Wow, thanks very much for the information. I did not know this, so I’m glad I ended up with the Artisan model this year. I have used it almost daily and have been generally happy with it, aside from the pasta attachment not fitting properly. It wasn’t cheap, and even though I had talked to customer support before purchasing the attachments from them, and they assured me that they’d fit my current model. They didn’t. The screw wasn’t long enough, nor was the hole to secure it long enough. It made me doubt whether the product had sufficient QC to warrant the high prices.

    I love mochi! My family used to steam and pound mochi the traditional way but my relatives have since past away so me and my sister use a mochi machine. We wash and soak our rice for a day. It’s a tradition we do every year so that we have fresh mochi for our Ozoni soup for New Year’s even here in Hawaii. Thank you for the option to use a stand mixer.

    Even in Japan, we are losing access to Mochitsuki because older generation pass away and not enough new generation take over this tradition. It's sad, but the food tradition still stays with mochi pounding machine! Yes, to steam mochigome, we need to soak the rice overnight, but bread maker (with mochi function) and rice cooker should not soak the rice at all (if anyone interested, it's on the blog post). Hopefully more people will be interested in making mochi with a stand mixer and mochi tradition will continue on!

    I made your mochi ice cream recipe a few years ago. I had never made mochi before, you are right...it is the stickiest food on the planet! Lol! It was so delicious! I want to make it again since making those perfectly round little cakes takes some practice. Thank you for showing how to make this in a stand mixer. :)

    I'm 1/4 Japanese from my dad's mom, but I didn't get to learn much of the language from her. However I always loved Japanese food especially mochi, which she would put a big blob in the bottom of our bowls of miso soup! Ever since I was tiny I would always say "mochi-mochi" while gleefully eating chewy bouncy mochi, without ever even knowing I was being anything other than silly! This sort of descriptor "mochi-mochi" is so intuitive and joyful to say. Thank you for this video, I can't wait to try it!

His mother grew up in Japan.And he talks about the things she and his grandmother used to make . And I know he loves Mochi.     My parents brought a large mochi machine with them when the immigrated to Canada (from Kagoshima) in the early 70's. I grew up eating homemade mochi every winter. The gasket for the machine went missing, so this was the first New Year's I didn't get homemade. I bought some instead, but not the same :(. Thank-you for this video! あけましておめでとう!

    How wonderful that you grew up eating fresh Mochi! This Mochi made in stand mixer is probably not comparable to mochi made with Mochi machine but when you don’t have the machine, it’s the closest we can do... hope you enjoy this recipe!

I was just about to spend $200+ on a Tiger Mochi making machine from Amazon for our ozoni, because pre-made mochi is so expensive, and my entire family cannot just have 2 or even 3, in their ozoni.     I've been tempted to buy a mochi machine too for a long time because I LOVE mochi.... but it's also too dangerous for me to have one as I don't have many family here to feed. Those machines can make a lot of mochi (vs Stand mixer 3 rice measuring cups kinda max) so it's perfect if you need to make a lot. And it's specialized for making mochi, so it's easy and perfectly done! Otherwise, this stand mixer is pretty good. I'm happy I can eat fresh mochi!!! :) Thank you for watching this video!

    Just One Cookbook.....Right? Lol! Dangerous for my family too! I’d much rather use your recipe! ❤️ I have a question please. When my okasama passed away, I kept her Zojirushi standard rice cooker. When I say “standard,” I mean-basic, LOL! You know, push the button to cook and then it has the warm features only. No sweet rice line......I cannot part with it, because it’s my mom....☺️ I have yet to upgrade to the beautiful rice cooker that you have. My question is..... will the measurements you provided 3 cups mochigome and 3 cups water work in my standard rice cooker as well?

    Water mark is for sweet rice (but I measured the water and mentioned in the recipe), and cooking menu is regular rice method. So don't worry about sweet rice setting. ;) Keep your rice cooker as long as you can!!! It's a treasure!

    Hi Nolwenn! Yeah, glutinous rice flour (short grain) is hard to find, but I think mochigome or sweet rice is relatively easier. Hope you enjoy!!!

    I think its easier after you wash the sweet rice, put in the blender and grind it up, then cook it.

    That flour is mochiko. But we don't make this type of mochi for New Years etc with mochiko, always with cooked rice. :) Maybe with the history of mochi pounding ceremony. It's easier to cook the rice than four mixture for a big amount of mochi.

    Hi I have two questions. I don't have rice maker, can i boil rice like for sushi? And second one, can i use sushi rice? I can't find mochi gome anywhere close to me or in good price :(

    You can cook in a pot over stovetop. However, you will need glutinous rice (sweet rice or mochigome - whatever called, same thing) to make mochi. If you cook rice (sushi rice), it will not become mochi.... Sorry....

    I don’t know where you live, but in the UK it’s called ‘pudding rice’ - you might be able to find some fairly cheaply?

    Mochi-mochi is the best way to describe the texture profile of ugali made from millet. In my native Luo language we'd say "poth-poth". Language is so interesting. Thanks for the video. This one will probably take a lot of tries and patience before getting it right.

    wow.. thanks for this video. In Bali, we also have a snack or cake (or whatever you call it) similar to mochi called Jaje Uli. it is basically mochi (as I think about how it was made), steam glutenous rice pounded until soft. but we add some shredded coconut and/or palm sugar in it (before it was pounded). we serve it during our Galungan and Kuningan day (or any other time we pray). i was always on pounding job since I was little (thanks to my mom 😏😏) and dude it was tiring! years have I wonder if i could use the mixer to do the job but not brave enough to try (afraid i’ll ruin the cake). now i know it is possible. Thank you! you dont know how grateful i am to you (or at least my arms are 😁)

    Mixer can't completely do what pounding job can do, but sometimes we don't have the right tool when you move abroad and we gotta find a way to make what we love. :D Jaje Uli sounds delicious!!! Wish to try it someday!
