I just love how the Japanese keep traditions alive for almost everything they do, I’m sure they could easily find or have a machine built to pound the mochi but instead they stick with the manual intensive labor to care for it, it’s a labor of love and a great appreciation for the art … In America it’s all about volume, convenience and efficiency … we automate practically everything we do … the care that goes into it I think it is what makes it good, I’m itching to try some myself
