How To Make Eggless Pumpkin Butter Cake Recipe Easy

Eggless Pumpkin Butter Cake | Eggless Pumpkin Bread - Butter cake is one of the most popular cake around the globe. Since autumn is around the corner, let’s add some value added into the butter cake with pumpkins. It’s a quick and easy recipe to get a moist and soft outcome of an eggless cake. Ingredients:
I am using 9x4x3 inch loaf pan (you can also use 6x6 inch)
110g [½ cup] fresh pumpkin, chopped
150 ml [½ cup + 2 tbsp] milk
1 tbsp white vinegar
225g [1¾ cup + 2 tbsp] cake flour
1½ tsp baking powder
¼ tsp baking soda
¼ tsp salt
¼ tsp nutmeg powder
⅛ tsp clove powder
100g [¼ cup + 3 tbsp] unsalted butter, softened
65g [¼ cup + 1 tbsp] white sugar
65g [¼ cup + 1 tbsp] brown sugar
1 tsp vanilla extract
15g [1 tbsp] milk
Instructions:
1. Preheat oven at 170°C/340°F.
2. Prepare the butter and cut them in cubes. Set aside until they are softened.
3. In a cup, add milk and white vinegar. Give it a quick mix and let it rest for about 5 min while working on the next step.
4. Sift all the dry ingredients into a bowl.
5. In another bowl, add softened butter and sugar. Mix until creamy, fluffy and pale. Scrape the bowl occasionally to ensure even mixing.
6. Add vanilla extract. Mix until well combined.
7. Add in the mashed pumpkins. Mix until combined.
8. Add in the sifted dry ingredients in 2 batches, alternate with the milk mixture. Add the milk mixture in 3 batches, alternate with the dry ingredients. Fold them in using spatula, do not over mix.
9. Add in a tbsp of milk if you find the batter a little too sticky and lumpy which I did for mine.
10. Transfer to a 9x4x3-inch loaf pan, greased and lined with parchment paper.
11. Bake in preheated oven at 170°C/340°F for 55-60 min, or until inserted skewer comes out clean.
12. Let the cake cool completely on the cooling rack.

Is it ok to boil the pumpkin like in your other recipes? And can we use yogurt instead of milk and vinegar?
If we use canned pumpkin puree, would it still be half a cup?

Hi. Tried the cake but it was a bit crumbly. I used almond milk instead of regular cow milk. That is the change I made. Can that be the reason why it's crumbly?Second is it possible to use buttermilk instead ?

Hi Fiona, I just made it with nut milk and vegan butter and it turns out to be thick, not spongy. Is it because I change the ingredients? Really hope to hear your advice.

Your ingredients should be fine. Try to mix the butter and sugar longer around 2 minutes. After adding the sifted dry ingredients, use a normal spatula to fold in until combined. Don't use the mixer, to prevent over mixing. These 2 points is to prevent thick and dense cake. I hope this will help you for your next bake

Yes I did eggless éclair. kzread.info/dash/bejne/opaTt5h6g9edcrg.html it's an easier way to make it, hope you like it. I actually have karpatha cake in mind too. Will do that some time soon, thanks dear

I am just a viewer. Just sharing my thpught/view. It wasn't curd. But the mixture of milk and vinegar. It is indicated in one of the steps in the method brief. This is a known thing that when milk is mxd with vinegar or lemon the result is a curdled form. I hope you understood my explanation.

Mam, I want to increase the shelf life of all the eggless cakes of your shown recipes, as I want to pack and sell the cakes.What preservatives I can add & what is the quantity.Thanks for your great recipes as always.

Hi. It's definitely a good move to sell cakes. In fact my sister in-law used to do that and had challenges increasing the shelf life, especially in hot country. After going through some experience, we need to get some preservatives (usually in a form of powder) from the baking ingredient shop. The amount needed will depend on the instructions given on the product

Do you have to steam the pumpkin? Can you roast it at all ???

You can roast it as well. I chose steam in this recipe because I want the natural flavor instead of roasted smokey, and also the fact that I will be using to bake in the cake. Baking it twice, the natural flavor may differ. Secondly it only took 10 min, roasting will probably take at least 40-50 min
