    Can't wait to make this! P.S. made it tonight! Totally delish. Didn't have a lot of mint, but had some fresh dill from the garden, and cilantro. Used the entire cuke, used red onion scallions from the farmers market, and added chopped kalamata olives. Super good! Will make again for an upcoming gathering.

    I absolutely love scallions too !! I always keep them on hand too as it really does freshen up so many dishes !! An important technique you did, and I do to, is sliding a knife down the white end of the scallions lengthwise, before dicing them, allowing the scallions to open up and spread out into whatever you are preparing !! This gives the scallion a lighter flavor and texture to the dish !! 👏🏼😋

    I toast the orzo in butter before cooking for a nutty flavor. This can also be made with rice or a mixture of both.

    Perfect summer salad! Question tho why not quickly run under cold water to cool the pasta? I do this with elbow & now I'm thinking it's not a good idea?

    Made it. Used basil and added some ground up red pepper for a hint of extra spice. Delicious albeit a little time consuming. Next time I’ll double the batch (doesn’t make as much as you’d think and it keeps fairly well) and get someone to help chop veggies which will cut the time down a lot.

    Asbestos is a toxic substance that used to be used as insulation (before we knew it was bad). It messes with the nerves and the way your brain responds to them. Saying one has asbestos hands refers to both the time period in which it was used and to the people that lived with it as part of life. The grannies of that time period could pick up very hot things (with limits) and move them about without potholders or waiting for them to cool. Heat proof is an excellent way to sum it up.

    I would cook and cool the orzo before preparing the rest of the salad. For example, the cucumber, sitting in the salty bowl, would leak and possibly lose some structure while you wait for the pasta; adding the vegetables right at the end would better preserve the crunch and the freshness.

It IS served cold (or room temperature).🤦🏼‍♀ Julia spread the orzo out on a sheet pan to cool it (5:20) and then indicated once it was mixed with all the other (cold and/or room temp) ingredients you could let it sit for 30 minutes or stick it in the fridge for a couple of hours (7:05). The recipe itself says it can be refrigerated for up to two days.

    This recipe was one of several variations of orzo salad developed by Julia's colleague, Ashley Moore for the February/March 2016 issue of Cook's Country where Ashley used the same amount of orzo and olive oil in each recipe, switching out equal amounts of balsamic vinegar, red wine vinegar or lemon juice depending on the other add-ins in each recipe. It's possible adding the zest might make the finished product too lemony and some people don't like seeing the zest or enjoy eating it (not me). But if you think it needs lemon zest, add it. 🤷🏼‍♀

    Lemon juice (citric acid) is used in this recipe instead of vinegar (acetic acid).     ?? Yeah, it does have red onions in it. It was the first thing Julia chopped up and added to the vinaigrette (2:05).🤦🏼‍♀It's also in the name of the recipe (link provided) and in the video description (also where you find the recipe link).
