OMG just made this with a couple variations and it was sooo delicious. No white wine, No peas, chicken stock instead of veg stock, and topped it with fresh parsley. This was so good I will definitely make it again. Thank you!!

I happen to have all those ingredients, so it must be fate! I never used to cook with wine, but I love it. I keep a bottle in my fridge just for recipes like this. I also have a thyme plant, so that's perfect. And I just made homemade veggie stock and washed all my kale. I know what's for dinner. Thanks!

A spoonful of balsamic adds 'zing' if substituting the goat's cheese with ricotta or crème fraîche. The recipe adapts well to chopped baby carrots, bell peppers, artichoke, leeks, and so on-great if using up oddments.

This looks yummy, can’t wait to make. I was wondering if you or anyone else has ever added a scoop of pea protein to these vegetarian recipes. I’m fighting cancer and I need to keep my protein up but not with too much meat. 🌿

I made this without the wine, thyme and goats cheese. I used Parsley , chicken thighs and cheddar cheese. Turned out brilliant. Thanks for a great dinner idea.

Wensleydale is a fantastic alternative to goats cheese, I have found. And Davidstow (Cornish cheddar) and Scottish cheddar work very well in the stead of Parmesan, for UK viewers.

First time I've heard of Orzo, ai don't think we have it in South Africa, might be wrong though. I'll definitely try this, looks yummy and effortless.

You are orzo lovely and your dish also orzo lovely. Haven't heard your puns in a while. I am thinking of giving this a try and see if my husband will warm up a little towards goat cheese.

This is a very nice recepe! Perfect for autumn! Careful about parmesan, though, it is techically not vegetarian since it contains rennet (which you find in a calf's stomach). Some pecorinos are vegetarian, you'll have to look at the label to see if they use rennet. To veganise this dish you could use (the buttery Alba-) oil instead of butter, vegan cream cheese or coconut milk (full-fat) and nutritional yeast.
