How to make DIY Grenadine (+ Pink Lady cocktail from

DIY Grenadine is surprisingly simple to make. It should be bright, tart and viscous and exhibits a deep red hue unlike the iridescent store bought grenadine.

Use a 100% pomegranate juice, preferably NOT from concentrate. The pomegranate should have a deep yet vibrant colour to it. Some pomegranate juices have a brownish tinge to it or a cloudiness - this will still work but they won't make your end cocktail look as visually appealing.
Purchasing the pomegranate juice is the easiest way unless you have a cold press or good quality juicer. Jeffery Morgenthaler recommends using a benchtop citrus press but this option will most likely be limited to bars and venues. I would avoid attempting to use a hand press (or citrus elbow) as it's a tedious process and is relatively inefficient at juicing pomegranates. Blending and straining does work but you will need to fine strain numerous times before running through a coffee filter - and it will still result in a cloudy juice.
You can utilise grenadine in many classic cocktails such as the Scofflaw, El Presidente, Mexican Firing Square, Pink Lady and Jack Rose. (See them here: bit.ly/grenadine-cocktails)

QUICK & EASY GRENADINE RECIPE
INGREDIENTS
- 1 cup of Sugar
- 1 cup of Pomegranate Juice (100% Juice)
- 30ml Pomegranate Molasses
- Half teaspoon of Orange Blossom Water (optional)
METHOD
1. Combine the sugar, juice and molasses into a saucepan
2. Turn heat on low
3. Stir until sugar is dissolved (without boiling)
4. Turn of the heat
5. Add the Orange Blossom Water
6. Let cool and bottle
PINK LADY COCKTAIL RECIPE
The Pink Lady is another classic cocktail created during prohibition. The original recipe calls for gin and apple brandy but if you don't have the apple brandy on hand then omit it for an equally impressive variant.
Often referred to as a close cousin to the Clover Club, it also closely resembles a White Lady. It's soft pink colour is deceptive as it's a vibrant, tart and extremely tasty pink drink.
Ensure you use a good quality grenadine (not the iridescent store bought kind) or make DIY grenadine.
METHOD
- 45ml Gin (1.5 oz)
- 15ml Laird's Applejack (0.5 oz)
- 30ml Fresh Lemon Juice (1 oz)
- 22.5ml Grenadine (0.75 oz)
- Half an egg white
METHOD
1. Combine all the ingredients into your cocktail shaker
2. Emulsify the egg by shaking without ice (dry shake)
3. Shake with ice (wet shake)
4. Strain into a chilled cocktail glass
4. Express lemon oils over the drink and discard

    Thank you so much for the HUGE shout out! It is such an honor to be featured on your channel! I'm always impressed when I realize how much the bartenders' community is like a brotherhood no matter where or who we are. That said, great video! I feel bad to see all the comments about you not smiling during the shake though LOL Also, I never thought of the reverse dry shake that way BTW and it makes sense. But if I may develop here, when you strain the cocktail after the "wet" shake, chards of ice will go through so when you dry shake after, you still add some cold in there. So now the question is, will you start to reverse dry shake or not? 😉

    Hahaha, I haven't read the other comments yet but I was expecting it... I realised whilst editing... I must have been concentrating too hard on grenadine! Hmm... it did produce a pretty good foam... but the dry shake first is ingrained into me... maybe I'll bust it out on special occasions 🤩

    Love your videos Steve. I fancy myself a novice closet bartender, ur videos have helped me big time. I subscribe to a rule of thumb that applies to most cocktails, including most of the ones you demo....2 parts main booze to One part liquor or secondary booze as well as most mixers. Sours are always about 1 to 1 simple syrup to lemon or lime... those simple rules can help the novice figure out how to make almost any cocktail they see on a menu that lists the ingredients but not quantities. Keep up the great videos and the smile while shaking ( clearly your signature)!

    I actually mixed the recipe from Bruce and this one a while back and I works beautifully the hibiscus doesn’t really do much other than intensefy the color and I had some vodka and a tiny bit of citric acid for conservation thanks Steve!

    @@StevetheBartender_ hmm. I made a random drink while helping a friend of mine at his pop up bar Gin 1.5oz Vodka 1.5oz Blue Curaçao .5oz Grenadine syrup .5oz Lime juice 1oz Shaken over ice. Gives a nice purple hue when done. Actually didn't come up with a name either. The measures are not exact tbh, made it on the fly 🙈

    Extracting pomegranate juice by hand is so labor intensive. I just get POM from Costco. I can get hibiscus juice from the Mexican grocery. I think they call it Jamaica (ha-mai-ka)

    Probably a few months.. add a shot of high proof vodka in to be safe.. and refrigerating it will give it the maximum possible shelf life.

    I made the gin only version tonight and used a whole egg white. I can see why you only used half, it was mostly foam! Still delicious because I love a good froth

    Javic167 add an oz if vodka and it will last much longer as long as the bottles were sterilized (in boiled water is best). Best kept in refrigerator.

    @@stephane.foisy.186 yeah I allways add boiling water to my bottles, before I fill them. The vodka also helps, but I was assuming the week for a normal fruity syrup, which is possibly not completely correct, cause you add fruits in there to infuse and double strain them out, which leaves particles of them in there, which make it last way shorter.

    I LOVE pomegranates, they're expensive here as well, won't be in season until our fall so another 6 months at least. I knew grenadine was made out of Poms, mist people don't know and most grenadine you buy in the stores are just red colored sugar water, it's terrible. My question, what's Pom syrup, I have a general idea but I've never heard of it. Where do you buy it or can you just make it?

    The molasses (syrup) used is a highly reduced pomegranate juice. If making it most recipes start with 4 cup juice and slowly simmer (not boil) until you get 1 cup of liquid left. Super concentrated flavour (less water). that is why this recipe is quicker where as, as Steve mentioned, the other recipe he saw requires more time to simmer down.

    How about removing the seeds by hand? It’s somewhat tedious, but I don’t mind. I then put the seeds on a food processor as it juices the seeds without breaking them, which makes for easier straining and a clear result. Everything else I do is like in this recipe.

    Steve the Bartender I also try to remove that white membrane in between the seeds as much as possible. It seems my food processor is bit shit, then. It just throws the seeds around, extracting the juice without breaking them.

    You could give it a try.. the original recipe does actually call for both gin and apple brandy so it wouldn’t be far off..

    Persian retailers, some local stores... it can be hard to find... try online otherwise just omit it and reduce your syrup by half to intensify the flavours... (on low heat)

    Shane Ashley Some of the recipes on my website are old and may differ slightly from the videos but we’re updating and tweaking as we go.. the description in the Pink Lady does detail the original recipe but mentions the adjusted recipe that I made in the video.. there’s a lot of data to check.. The next version will have a feedback button in the main menu if you did want to report any differences :-)
