On this episode of How to Drink, I’m making Grenadine! Grenadine is a commonly used syrup that is characterized by being tart and sweet with a red color to it. This is an easy syrup to make and great to have around the bar when needed! Hope you enjoy this syrup as much as I do! Cheers!
Ingredients:
1.5 Cups of Sugar
1.5 Cups of Pomegranate Juice
1.5 oz. Pomegranate Molasses
.5 Teaspoon Orange Flower Water

@@DaveTugwell According to the US Supreme Court it is. They ruled tomatoes are vegetables(for tax reasons). There are now taxes on importing fruits so that old ruling would be overturned if it was brought to them again but it hasn't because they have more important things to deal with.

When I was a kid in the early 80s, my mom was a bartender and back then they didn't complain too much about kids being in the bar as long as it wasn't busy and the kid didn't sit at the bar. My mom used to make me Shirley Temples or a Roy Rogers cocktail all the time. I always thought grenadine was cherry juice.
The way we juice pomegranates is through crushing (by hand or with something like a wooden spion) it prior to opening it, and then puncturing it and squeezing the juice out.
"There's a lot of bad grenadine out there" Like what 90% of the bars around here buy. I know far too many people who are convinced it's cherry flavoring even after I explain what grenade means.

In the defense of the people who don't believe you there isn't any pomegranate in the cheap stuff most bars use. It is artificially flavored and not a very accurate reproduction.

Sad-ish story: whilst in college, my buddy and I were talked/conned into trying grenadine syrup in Budweiser. Sickness ensued. Haven't been able to get anywhere near grenadine syrup since. Live & learn.....

Budweiser - That's the problem here. That or the grenadine may have been bad but more likely it was the Budweiser.

Nice recipe! Here in Russia it's quite difficult to get molasses, so I boiled and evaporated 200 ml of fresh juice to make it thicker, and instead of orange water, I put several orange peels while syrop boiling. Don't know if the taste is very different from that you got, but it's damn good.

If you have access to any central Asian, Iranian or Turkish grocers or supermarkets, or if you can have it shipped to you, do try and get orange flower water. Orange flower is not the same as orange fruit or peel at all, it's a very different, floral aroma. I have no doubt that what you made was very good, but it will be a very different thing to the actual desired final product. On the bright side, you've probably made something new and awesome. Hope it goes well in something!

sorry for commenting so late, i made this recipie as the ingredients were being read out and just now woke up from a coma induced by grenadine made with a 1:1:1 mixture of sugar, juice, and molasses! 10/10
With the leftover pomegranate syrup, you can use it in place of vinegar in just about any recipe. Salad dressing, pan sauces, etc. It may not be 1:1 so add to taste.

Excellent recipe! Way better than the red stuff at the store. My first batch only kept about 2-3 weeks unrefrigerated. This next batch is going in the frige
Grew up with bottles and bottles of pomegranate syrup in our pantry. Used a lot in Persian cooking!

It's funny you mention the "red" flavor. I actually make a syrup out of fresh raspberry juice and rosewater that I just call "Raz" syrup, and I like it so much that I use it a lot. It's gotten to the point that I just associate the color "red" with that flavor. It doesn't hurt that both raspberries and roses are directly associated with the color red...even though non-red varieties of both of those things exist.
If you are still needing a recipe for pomegranate molasses these years later, I recommend mixing 1/4 pomegranate molasses with a 1/4 cup tomato paste and a tablespoon and a half of seven spice (one part cinnamon, cumin, coriander, ground cardamom, black pepper, half part each cloves and nutmeg) and coating a couple pounds of catfish nuggets in that. Cook those nuggets under the broiler on a parchment so they won't stick, and pile them into flour tortillas with chopped raw onion, sliced radish and shredded lettuce. Top it off crema or some other cooling sauce of your choice and enjoy.
thing to note. you can make your own pomegranate molasses by taking some of the pomegranate juice and just simmering it slowly until it reduces to a thick syrup about the consistency of honey

Grenadine is the best! I put it in my sodas and it makes it so much better. It also works on ice cream, not too much though
Pomegranate molasses makes really lovely salad dressing ( particularly if it's bitter leaves like chicory x)
If its anything like simply syrup you can add a bit of vodka in when you pour it to add shelf life.
Tried It, It's amazing. Did a one cup bottle and canned the rest in mason jars as if it was jam (sterilized and 10 min bowling treatment)

After using the additive riddled red sugar syrup that poses as grenadine in the shops for years, just made this using the recipe and it’s awesome. Wasn’t sure I could get hold of grenadine molasses here in the UK, but found it in a Mediterranean supermarket about half a mile from my house.
pomegranate molasses is pomegranate juice cooked into syrup using low heat just buy a bottle of juice and put it in a crock pot on low (with the lid off) I use it all the time in cooking and had to start making it because I couldn't find it after I moved

Yeah you have to cut Pomegranate open under water. You just place them in a bowl and the spills are contained, the wax floats and the nettles sink to the bottom. After that juicing is easy.

That is very generous of you, but I accept your flattery as gospel.
Try replacing the orange water or simply adding vanilla extract to your grenadine, you won't be disappointed.

Question for you! With this recipe, will it stay shelf or fridge stable or would I need to worry about it going 'bad'? I know most store bought grenadine is shelf stable, but wanted to double check in case homemade is any different

the ward 8 video came up which lead me to watch this. would you suggest adding vodka to syrups one can make to help extend shelf life?
Any recommendations for a good premade syrup? I've never used the stuff and I'd rather try it before going through all the trouble of making a homemade batch to see if it's worth it to pay extra for all the ingredients I'll need (I live in the south) The most interaction I've had with Pomegranate is PomWonderful (Honey Green Tea is awesome) and once eons ago in the mist of ages I had a history teacher in middle school who when we studied Greek myths he let us try pomegranate seeds like the story of Hades and Persephone. So..yeah considering I can get a premade bottle for under 20 bucks while it'd be around 50 bucks to get the stuff to make my own...yeah...I'd rather know if there is a good premade grenadine to try.

Hey Greg, is this shelf stable? I would assume that it is. I'm wanting to make my own and have all of the ingredients, but I don't really use a ton of grenadine.

I’m a little curious about the shelf life lol and how to store it, does anyone know?
One tip when handling pomegrenades: DO NOT cut them open aka slice them in half You make a shallow cut into the outer shell and then crack them open. You then seperate the seeds from the white stuff. The white stuff is bitter and you dont want that anywhere in your juice. Then you can juice them using a press.
Pro tip if you’re juicing pomegranates: put the seeds in a plastic bag and crush it with a roller or your hands or a pestle from you mortar and pestle set then strain it. It’s much neater that way
How long does a bottle of this last? I'd assume less than the store bought one because there's no preservatives. I don't use it often but it would be nice to have some homemade stuff sitting around when I do.

In the fridge it'll last months at least. I don't think I've ever had a batch go bad on me.

Perhaps more a testament to how much you drink rather than the longevity of the syrup...
Before I try this, I'm interested in cooking times :D Like, do we bring this to a rolling boil and then bring it down to simmer for ... how long? Do we just make it warm enough to bubble for a few minutes? Do we simmer to personal texture preference? Help?

Bit late but if it's anything like other simple syrups (and I don't see why it shouldn't be) it just needs enough heat to melt the sugar completely, not even neccessarily boiling. In fact, if you want to be fussy about your cocktails you should boil it as little as possible since it will concentrate the sweetness and you want to know exactly how much sugar you are adding to a cocktail with a certain volume of syrup if you're specific about the balance. :)

Where do can I keep it? Like in the fridge or in a dry, cool, place?

Season four for sure. I had a whole slate of tiki drinks planned for my season 2 shoot, but we wound up only having time for two of them. Season three was too wintery for tiki, but Season four...
Is the shelf life for this as stable as standard simple?
I miss this old intro. The cold opens are cool and all, but there is something classy about this.
How long would you say this grenadine will keep in the fridge before you need to toss it?
I like the vids where you show how to make syrups, but how do you keep them from spoiling? Add a bit of Everclear to sterilize? And where can you find the bottles and quick pour tops?

I don't seem to have any trouble with them going bad as long as they stay in the fridge. I've done the everclear thing in the past, and I think it made it into one of the syrup videos, but it really is so little ABV that it can't be having any real effect. I'd say that making sure your bottles are super clean before you pour anything into them is probably really important. The bottles I use I found at the back of a dusty shelf at my local supermarket for about 1$ each, but they're pretty standard glass bottles, you can find things just like them on amazon. The speed pours are standard speedpours, I think I bought mine at Cocktail Kingdom.

My grandma used Pomegranate molasses in the meat stuffing and sauce for her fried Kibbee (Bulghur wheat/ground lamb/ground bison dumplings). Never did share the recipe. Darnit...

Very long time in the fridge, months and months in my experience.
I now know my childhood was wasted drinking Shirley Temples and Roy Rogers using that store brand stuff. Thanks for the recipe.
I tried this recipe with fresh squeeze juice, the flavor was good but it wasn't RED... one the next batch I used "POM Wonderful" juice (from concentrate) and it came out PERFECT!!

@@devinl9747 yes I used a 1:1 ratio of "Pom Wonderful" and sugar. I also wasn't able to find pomegranate molasses or orange blossoms water, so I replaced it with orange blossom honey, about 1/2 tablespoon per cup of "Pom Wonderful". It is hands down the best grenadine I've ever had, the taste and color is PERFECT.
Hey Greg, why the pomegranate molasses? Is it just flavor, a preservative, to stop crystallization, or maybe something else? Also does this need to be refrigerated? Thanks, love the show

A year late, but I imagine it's just as a flavor boost. Pomegranate molasses is just pom juice, sugar, and a small amount of lemon juice reduced to a syrup. About 8 parts juice to one part sugar.

Not one on all of them. They’re kinda scattered around. There’s a playlist for them though.
I feel like this could use some citric acid to help stall oxidization, but if you use it quickly enough, I'm sure it's fine.

Wouldn't really be Grenadine though, since the word is derived from the French word for "Pomegranate", "Grenade." And yes, that is also where the explosive got its name.
I`m calling on the good graces of Greg to look at a comment for one of his three year old videos. I live in Japan and it is pretty non-cost effective to try to make from scratch just cuz of import fees or lack of availabilityto even POM juice... The two big brands that are available on amazon are Darbo or Monin... I know both have sugar listed as the first ingredient. But maybe you`ve heard reviews or tried yourself? I have seen some pomegranite syrups that seem to have more pomegranite juice listed but I kind of assume they dont have the orange flower water (not like these syrups do anyway..)
Fun fact: Pomegranate molasses is Pomegranate juice, and sugar, at about an 8:1 ratio of juice to sugar, and a small amount of lemon juice, reduced to a syrup. If you're going to make homemade grenadine you might as well make homemade Pomegranate molasses first.

Something tells me Pomegranate Molasses is just Pomegranate syrup with a higher sugar concentration or some type of thickening agent since Molasses is a byproduct of sugar refining and the word is often used as a synonym for "thick syrupy consistency"..

I think the molasses is unnecessary. I've made it without, and it was fine. I also use fresh lemon rather than orange blossom water. Just preference. They both add very little flavor. It's like he said in the beginning. It's basically pomegranate simple syrup. No need to over complicate it
