This week on How to Drink I'm doing a deep dive into the Old Fashioned tracing it's evolution from the room-temperature "Cocktail" of the 1850's all the way up to today's spirit forward speakeasy friendly drink in 2019. I make five drinks along the way, and truth be told there's probably a lot more I could have done with this drink (the cocktail "schism" that coined the name "Old-Fashioned" was tied to reconstruction era politics and that's a whole lot to unpack) but this episode was already twenty minutes long so I figured we save that for another day.
The 1850's Cocktail
1 sugar cube Soak with bitters
~ 2oz. or 60 ml. of spirit (I go with Genever here)
~ 3oz. or 90 ml. of Water (could be less)
Stir till sugar dissolves
Garnish with grated nutmeg (or the twist of your choice)
1860's Improved Whiskey Cocktail
2 bar-spoons of Gum Syrup
1 dash of Curaçao
1 Dash of Maraschino
1-2 dashes of Absinthe
2-4 Dashes Angostura Bitters
2 oz. or 60 ml. Rye
Garnish with Flamed Orange Twist
1870's Old-Fashioned Cocktail
Sugar Cube soaked in Bitters
2 oz. or 60 ml. Rye
Stir over ice
Garnish with Twist of Lemon or Orange
The Mid-Century Old-Fashioned
1 wedge of Orange
2 Maraschino Cherries
2 oz. or 60 ml. Bourbon
2 Dashes Angostura Bitters
Muddle fruit and drink together
bury in cracked ice and stir
The Modern Old-Fashioned
~ .25 or 8 ml. Demerara Syrup
Two Dashes Angostura Bitters
2 oz. or 60 ml. Bourbon
Stir over big ice
Garnish with Orange Twist

There are only three channels on KZread that never fail to get me excited when I see that they've uploaded a new video, and those channels are How To Drink, Townsends, and Binging with Babish. I was so happy when you appeared on the Holiday Cocktails episode on Binging with Babish, and now this? This just ties it all together for me.

I really appreciate the shout out to Townsend. I've been watching that guy for 3 years now. I've even started grating my own nutmeg. I've only discovered this channel this week but watched about 30 videos now.
If the drink you like is in the glass and all over the bar then you did it right.
The final 15 seconds was like watching evolution go backwards. Still.... could be worse. More of these deep-dives please.
I know this is a few months old, but that "Oh sh*t!" thing you did over the orange is what I do when I'm having a boozed good-time and see a snack.
The old fashioned has been a standby for me for years. I just rewatched this video, and thought "hell, why not try the demerara syrup recipe rather than the sugar cube I always use?" Wow. Excellent drink. Cheers, Greg!

I think he meant electrolytes from orange which usually hydrates 2x-3x faster compared to water, but maybe he enjoyed cocktails a little too much and said he need "electric light" instead of "electrolyte" 😅😂

Waiting on the Wisconsin version of the old fashioned episode! My favorite WI version is the brandy old fashioned (with of course the muddled Luxardo cherry, orange, and bitters) pressed (half 7up half seltzer) with a Luxardo Cherry and orange for a garnish. Some people take brandy old fashioned sour with pickled mushrooms or even brussel sprouts. So many ways they are mixed here. I was so confused when I went to Florida and ordered an old fashioned and it was not what I expected 😂

I've been making the "Modern Old Fashioned" as described in this video for the past month. My wife and I have really been enjoying the Old Fashioned at the end of a long day, and it is just such a fantastic thing. Great recipe. It really is "Christmas in a glass."

In love with your videos, can't get enough of it, great shots and content. Kudos, good sir!
I dunno, I've always had good luck dissolving sugar in my old fashioned, but I use a splash of water, teaspoon of sugar, and enough ango to saturate the sugar I also try to use as little water as possible to dissolve the sugar, and then add all the other ingredients from the mid-century with the whiskey (my preference is rye) last. Important to note, I use a slice of tangelo where possible rather than a wedge of an orange, and only one luxardo cherry with a drizzle of syrup, and I DO NOT muddle them. I stir it and let it rest to, as our friend Babish puts it "Let those flavors get to know each other."
This video popped up at random in my 'suggested videos' and I've basically been binge-watching (and generally getting a whole lot of bad/great ideas) for about the last two hours. I literally can't thank you enough. Cheers!

Having grown up in Wisconsin since age 3 (30 now), I applaud you, sir. I'm just starting to get really into whiskies via The Whiskey Vault/Whiskey Tribe and those guys gave you a shout out, and for good reason. Quality stuff. Do a Wisconsin brandy old fashioned next!
I made a version of your improved whiskey cocktail, with High West Double Rye, and simple syrup ('cause I don't keep gum syrup around). The way peoples' faces light up when they taste it is priceless. I even got a "now, that's a drink!" Thanks.
This video was very eye opening, I recently discovered I love the old fashioned after graduating from college. The drink as far as I remember (I had a few) was not heavy on the syrups and had not only whisky but also rum which is an amazing combination in my opinion. I still need to try more different varieties of the old fashioned but it is still a drink I love.
As someone who has never even tasted Alcohol before (im 24) i love watching your channel, i always imagine what alcohol tastes like. The even more ironic part is that ive spent my entire adult life in restaurants and bars and can make these cocktails.

I'm looking forward to trying some of those older recipes! My at home mix tends to be: 1/2 teaspoon of sugar dissolved in 4ish dashes of bitters (maybe more, I love bitters), add a tablespoon of carbonated water and whisk with spoon until sugar is mostly dissolved, twist of orange wiped around the sides and the rim of the glass and whisked in with the sugars and bitters, 2.5ish oz of rye or bourbon (sometimes more... it's mostly eyeballed) then add a big cube and give it a stir

Thanks for bring up the Wisconsin Old Fashioned! I am from Wisconsin and have worked in Supper Clubs back when I was a teenager in the 90's. All my aunts and uncles drink Old Fashioneds, especially at Christmas. In Wisconsin if you order an old fashion you order it like so: "Old Fashioned" My favorite is a Brandy Old Fashioned Sweet. The other popular version is Whiskey Old Fashion Sour. I've also seen SoCo Old Fashioned Press. Sweet means to use 7-up or Sprite, Sour means to use Squirt or 50/50. Both use bitters, sugar, some people put a cherry or orange wedge in there, then muddle, then put in your spirit, ice, then either sweet or sour soda. Garnished with your choice of cherry, orange wedge, or even an olive. I've heard the History has to do with Wisconsin's mostly German heritage and their love of Brandy. At the Chicago World's Fair a lot of Wisconsinites went to discover an American made brandy. They fell in love all over again with Brandy. Yadda yadda yadda Brandy Old Fashioned

I do Christian brothers brandy, orange round, 2 neon red Maraschino cherries, orange Angostura bitters, muddle, drop in ice cubes, stir, top of with sprite. Sometimes I put in grenadine but the sprite is usually enough sweet for me. I like the bubbles as well
By far my favorite episode. Partialy because I love old fasioneds and second, I love old fashioneds. I discovered this awesome channel by searching for the ultimate recipe and not only did I find a history of the drink, but a great channel that is not only awesome, but history too. So cheers!

When he takes the slow mow close ups of him pouring the ingredients into the cup I amazed any of it makes into the cup like half of it is spilled.

I bought my first bottle of whiskey sometime earlier this year and I chose Four Roses Single Barrel on a whim. It’s such a great bourbon and I feel like I definitely made the right choice, seeing that you enjoy it too.

The origin of the term 'cocktail which I've heard (no sources here; it's all hear-say) is that the term comes from the copious garnishes some bar tenders added to their drinks. Some people equated it to a rooster's or peacock's tail, showing off. The idea in this case was that a cocktail was making a drink seem fancier or more attractive, and so entice buyers.
