How to Make A Pie Crust | Allrecipes

Тәжірибелік нұсқаулар және стиль

Learn how to make a flaky homemade pie crust in seven easy steps.
The tastiest pies are made from the crust up. In this video, you'll learn how to make homemade pie crusts in seven easy-to-follow steps. All you need are flour, water, salt, and fat (butter, shortening, or lard). You'll learn the proper order for mixing together ingredients and how to cut in the fat, and see why a combination of fats sometimes makes the best pies (with some fats adding flakiness to the crust and others rich flavor). You'll see tricks for easily mixing the fat into the dry ingredients and see what the mixture should look like when prepared just right, so you'll end up with a wonderfully flakey pie crust. You'll learn when to add the water and how much to add at a time. You'll learn how to test the pie dough for moisture and how to avoid adding too much water or overworking the dough, which will give you a tough pie crust. You'll also learn why the dough should rest in the refrigerator for an hour and how best to store it. Then you'll see a great technique for rolling out pie dough on a floured counter and learn how to judge whether the crust has been rolled out large enough to fit the pie pan. You'll also see how to gently fold the pie crust and lay it out in the pie pan and get great tips for trimming and crimping the edges and for fixing any cracks or tears in the pie pastry. You'll also see how to prevent the dough from shrinking during baking. Learning these easy techniques will help you bake the best homemade pies-from apple and cherry pies to pumpkin and pecan pies-even chicken pot pies!

Hi, all - We'll jump into the fat conversation here because for bakers, fat is a good thing. It's an ingredient that "shortens" or tenderizes baked goods. Shortening can refer to any fat used in baking: butter, margarine, vegetable lard, vegetable shortening. These fats coat the protein molecules in flour, making it difficult for them to combine and create the stretchy material called gluten. Any gluten strands that form are "shortened," rather than lengthened, which is what happens with fat-free breads. When fat is used, it produces a tender, cake-like texture. Fat is also nature's way of storing energy. All animals contain fat, as do plants. Fat is a more compact storage unit than a carbohydrate. A gram of fat provides twice as much energy as a gram of carbohydrates or even protein. The goal is to use a fat that balances both health and the requirements of the recipe you're making. This might be more than you wanted to know, but we hope it's helpful. Happy baking!

I've been wanting to learn how to make a homemade pot pie crust for weeks now. And after stressing about the process for two days now trying to gear up with enough research before I dived in I just finished my first ever one a half hour ago. It didn't come out that bad, this vid definitely was helpful but not having the measurements sucked but I'm glad someone on the comment thread posted them THANK YOU, also check out Crouton Crackerjack's vid it really helped out alot too more so than this because he taught me how to make a lid for the pot pie if you're doing a double one. I know it's a process but it's so worth it, my family loved the buttery flakey surface I just wished the base was cooked alittle more crispy.

Thank you for this video, I have just one question: How to remove baked crust from a pan?

Hello, Дмитрий Чуприс - Pie crusts are typically left in the pie pan and the pie filling ingredients are added to fill the pan. You won't need to remove the crust until you serve the pie, which is when you'll cut slices of the pie and lift them out with a triangle-shaped pie spatula. Hope this helps.

What are the exact measurements for this recipe? I'm assuming the fat is 1 cup but the flour? Also I clicked the link for the recipe but it doesn't work.

This gives me confidence in trying to make a pie crust, so I'm grateful for the video. However, I don't think you want to use salted butter as shown in the video to make the crust.
