Aye, a great recipe guide it is! I changed mine up slightly by using a dark roux of flour browned in butter until it's the color of dark caramel. Adds such a rich flavor to an already amazing pie.

Omg I feel like Winnie the Pooh just taught me how to make a wonderful pie! I make very good pastry (okay I make the best that anyone ever had according to my friends family and coworkers 😃) but this is a method that boggles my mind! I am definitely going to make these the next time I have company come for a wknd. Perfect meal on a chilly autumn night in Canada!

As an Australian, I'm staggered that there are people who didn't know about steak pies and how amazing they are. We live off meat pies over here and steak pies are considered one of the best kinds you can get. If you want to really liven up the filling, you can toss in a tiny little bit of Guinness (or even a trace of Vegemite).
I'm so glad this popped up in my recommended this man's voice is absolutely gravy and things he cooks makes me feel like I'm at my grandparents kitchen

Although I live in Hungary, my daughters and their families still live in County Durham. It's lovely to hear a NE accent where I spent about 20 years. I never thought of using hot-water pastry for steak pies (I use it for pork pies of course) so I'll give it a go. They don't make meat pies in Hungary so I have to make them myself. Cannot buy them in shops.
Between 1974 and 1979 my father worked at Vickers shipyards in Barrow-in-furness, England. It was a wonderful time and even though I was a child, I remember everything in great detail! I especially remember the foods among them, fish and chips and meat pie. Simply divine!

67 year old Kiwi here. I've had heaps of pies, starting from the odd pie with Mum and Dad while on the road through to Tuckshop pies at high school etc. Some were good, others were barely edible and some were sublime. For me, the best pie in NZ is the BP gas station Steak and Mushroom pie. Nevertheless, this recipe will likely blow your socks off. I can't wait to try it out. Thanks for sharing.

Posting again!! I just made these and my fiancee HATES pastry!! These pies were INCREDIBLE, AND she asked for more! The beef taste was and consistency were amazing John! And the gravy with it's dark beef taste was unreal! I served them with a garlic mashed potatoes and mashed carrots and I was straining to find room.. I did have to give up credit to you cause I failed at this a couple of years ago and she was on to me. 😁 Wonderful recipe and she has requested this to be her Birthday dinner! Thank you my friend!

Thank you Chef! I made the dough for steak and kidney pie using this recipe. Also didn’t thicken filling with corn flour/other tickeners. Just added extra onions. Was the best steak and kidney pie ever made.

Not an exaggeration to say this is Brilliantly skillful, very clearly presented and full of new tips that will prove mighty useful. I prefer thickening with a roux. I'm American but 35 years ago I was the chef in a British restaurant here in Pennsylvania. I use to make beef and kidney pie and beef Wellington amongst other British dishes. Your meat pies look delicious!! Thanks for showing!!!

I can almost smell and taste them….YUMMY! My father was an Executive Chef (May he rest in peace🙏) and he made thee best minced meat pies during the Christmas holiday season, served with gravy, fries and a veggie. Your video brought back so many memories for me. My father is gone 10 years this August. His cooking/baking was sooooo good! 🇨🇦❤️

Cool the pan in a sink of cool water - this is a "double cooler" - it's just like a double boiler, but removes heat instead of adding it. Great innovation!
Never made this kind of pastrie. Tried it yesterday for the first time and with the soothing voice of John explaining the end result was that my kids of 2 and 4 where actually quiet for half an hour at the diner table! 😊 thank you!

Hi John, I just came on here to tell you that I made your steak pies for dinner for my family and they were overwhelmingly delighted. They've asked me to repeat it again soon! I love the hot water crust. The flavor of the crust was so savory and went well with the saucy interior. No leakage at all. Also just to throw in a helpful comment: the ratio and your recipe works perfectly for a 12 cup cupcake pan as well, for the American crowd. (I actually squeezed 13). Thanks again for sharing it.

I followed the recipe (with everything I could find in the house, so I ended up making mini chicken pies, using a cup cake tin - which was the only metal thing I could find. They tasted amazing though. I was inspired to go and buy proper ingredients and will try again this coming Saturday. Thanks for a taste of home (I’m an expat living in Singapore).

I got recommended this after your crumpet recipe turned up in my feed for the first time! Hands down the best pastry I have ever made. I'm just a home hobbyist, but I've put good effort into reading up on pastry and baking, testing lots of different recipes and even having a few attempts at puff pastry by hand. I followed the process closely and the measurements to the gram, and my first go came out practically perfect! I'll definately be keeping this one in mind and will make my way back through the archive. Great job John!

I have made this excellent recipe several times, varying the fillings. Most recently: fried onions, fried cabbage and pulled pork - superb! Anyway, here are a couple of tips from me. First, if you refrigerate the pastry in a ball, it will be hard to roll out without cracking. So, I "pre-flatten" it to about 3/4 inch before refrigerating. In any case, it must be taken out of the fridge one half hour before rolling. Second, I cool the filling to roughly room temperature before spooning it into the molds. Otherwise it can damage the pastry which, after all, is mostly fat.

John im a retired cook to used to work in a nursing home,ive never made the hot water pastry i will definitely be having ago at these steak pies they look so tasty i usually make mine with short crust pastry,ive also brought the ingredients to make your pork pies. Please let us know what you thought of the hot water crust. I'm afraid it would be tough, even rolling it out gently. The cold butter/lard version always makes for a tender, flakey crust. Thanks

I made this filling and gravy recipe for pies for our dinner last night. I used store bought crust and made them in my Wolfgang Puck pie maker. Next time I will make the crust in the recipe. I wanted to make 4 but there wasn't enough filling so I boiled some cubed potatoes and added them to the meat mixture while it was cooling and it was perfect. They were so delicious and thank you for showing us the gravy mix. I am so glad I found it on Amazon and will keep in on hand now. Again, thank you for your video!

Great recipe, and I second all of the positive comments for your friendly and helpful videos, John! I tried this today, with an interesting variant on the pastry. Got about a kilo of lamb bones with plenty of fat and some meat and zapped in the pressure cooker. Took out the meat and bones, and what remained was very close to the fat/water ratio (see ingredients). Added the butter, let it cool a little, then added to the flour and made the pastry. My boys are destroying the pies as I write:-)....oh, and the dog got the bones!!!
