BEEF TONGUE - INSTANT POT
INGREDIENTS:
1 4-5 pound beef tongue
2 cups beef broth
2 cups chicken broth
1 large onion quartered
1 head of garlic, peeled and crushed
3 dried guajillo peppers
2 tablespoons peppercorns
2 tablespoons sea salt
oil for frying
DIRECTIONS
Remove the tongue, lay it flat if it’s rolled up on itself. Now, towards the back, there may be a lot of fat. I like to trim that off - it’s optional. Score the top of the tongue slightly about 5 times. Place it in the pot, along with all the other ingredients except the oil. You want the tongue covered with the liquid. If you don’t have enough, just top it off with water. I used a little less than 4 cups.
Set your pressure cooker for 50 minutes, high, with a natural release. When pressure is fully released, carefully remove the tongue to a cutting board and let it cool a bit. Once cool, slice into the skin that covers the tongue and peel it off. It comes off very easily and must be removed before eating.
Once you have the skin off, cut the tongue into about 1/4 or 1/2 inch slices. Heat oil in a skillet and brown the slices on both sides. Once all slices are browned, chop them up into bite-sized chunks. Eat.
STOVETOP:
If you’re cooking this on the stove, it’s exactly as above, but you’re going to simmer for about 3 hours. At the 2 hour mark, start poking it to check for tenderness. When tender, same as above - remove to cool, cut, fry, chunk, eat.
I made a very simple sauce to go on my tacos: I blistered 2 dried guajillos. I put that in a pot with 1 onion peeled, 3 roma tomatoes, 1 jalapeno, and 4 cloves of peeled garlic. I covered with water and simmered everything until tender. I removed the dried chiles and removed the seeds. I peeled the tomatoes. I tossed everything in a blender with a splash of vinegar, salt to taste.

    Lengua Tacos are definitely my #1 taco! I tried it first in New Mexico on a bit of a dare (along with seso and chiva tacos). Lengua became my favorite. And as you said, it's really just a big muscle like any other meat we eat. Thanks for the video!

    Wow what a great recipe. I cooked mine a total of 70 minutes because I wanted to shred it. It was perfect for that. Tip: Dice about a 1/4 onion and sauté it for a bit in a little oil then add the shredded lengua meat then make tacos with avocado and hot sauce so good.     I'm doing one right now with a bit of pickling spice, garlic, celery salt and onion powder. My Mom's recipe from 65 years ago. It was moose back then, but cow will do. Enjoy.

    That is my family's favorite taco's! I jusj cooked 2 beef tongues last weekend in a crock pot! I love this stuff topped with a little diced white onion and cilantro! I also like to slice it and make a sandwich with it! Thanks for sharing Jaxx!

    They look good all we do is boil lengua with onion, garlic and Bay leafs. We don't fry it just cut it and eat it with cilantro, chopped onion and green avocado salsa. 😋

    Hello. I have had tongue before and I totally love it. I have never cooked it and I think the look of it would be kinda hard for me to deal. No doubt it was so very tasty. I would have love to see the taco too but I was trying to imagine ! 👍

    I only get beef tongue when I get my paycheck or on some special days. They are like $25, and it really doesn’t make sense to me they are expensive.

    In México is expensive because everyone wants it but is a really small portion. Actually, lengua and sesos tacos costs $25 pesos and pastor, bisteck suadero costs $10. Too much demand and not much tongue on one cow.

    I personally don't do anything with it, but it's only because I haven't thought of doing anything with it - you're on to something here Vincent! I do save other liquids for soups and I'm sure this would be delicious for soup!
