Burger Scholar George Motz teaches you how to cook his favorite patty melt! Motz says this is the burger he dreams about all the time, and you'll quickly learn why it's so unique. Borrowing a method from Wisconsin burger shacks, Motz poaches the hamburger patty in beef stock and slides it in between a grilled cheese. This is truly regional hamburger nirvana.

    I used to work as a short order cook on a National Guard base, and we did a lot of burgers. Right before we opened every day, we would sear off 6 or 8 patties, and toss them in a third pan that stayed on the flat top, full of beef broth and Worcestershire sauce. When it came time to serve, we would scoop one out, put it on the grill long enough to dry the outside, and onto the bun, then sear off another one to replace it. They just sat in that hot broth and finished cooking. I kinda want one now, they were actually really good.

    @Christopher Arteaga aside from a sprinkle of salt and pepper when the patties went out, the broth and worcestershire was it. Everything was premade, keep costs down kind of stuff. Premade patties, boxed broth, etc. We did a ton of them, though.

    In the 80s I used to go to air shows on the US air bases in England. It was great - you'd arrive at about 9am and soon after you'd get a can of Budweiser from an iced dustbin and a burger. This sounds like the way they did them - they were definitely wet. This is good intel, I might make one!

    I'm just sayin here: George has done peanut butter burgers (not even peanut sauce lol), pimento-cheese burgers, hot dog burgers, and even burgers that take over an hour to cook; somehow all of them have seemed worth it. It's simply impossible that George would be unable to make a shrimp burgerlook appealing in the video. I don't even know why it hasn't happened yet. I want one already.

    Been loving this series since it debuted. George is the kind of guy I’d love to sit down and have a beer with and see where the conversation goes. I also never thought it’d happen but Joe Rouer’s was referenced! I grew up less than 20 minutes away in Green Bay. It’s hard to beat a Joe burger.

    @@stevekjr9563 In my honest opinion, no. Unless you're truly down to check it out for nostalgia/burger nerd purposes, it's kinda mediocre as burgers go. Door County absolutely is, and if you're near Joe Rouer's it's something to check off the list, but I wouldn't make a special trip. Kroll's in Green Bay should probably be the NE Wisconsin burger mecca.

    @@LimpyLegolas what kind of bread are you buying LOL. There's no way two slices costs more than a hamburger bun, unless you're comparing something like Dave's killer bread to the most basicest (I know this isn't a word, laugh a little) of basic buns you can find, with the regulation-accepted amount of sawdust in it and no less. Anyway the point is, if you don't have buns sitting around already it's obviously more expensive to buy a package of them than it is to just grab a couple slices of the bread that you already bought. Everyone's got some bread sitting around, not everyone has buns sitting around.

    My favorite show of the week. I wish we could get a few episodes about the basics. For example an episode surrounding the history of hamburger buns and their different variations with regards to what works better with what kind of Hamburger - white squishy vs. sesame seed vs. kaiser roll etc. Toasted, not toasted. A Deep dive!

    I was hungry one night I just came back from the store and I wanted something quick and easy to eat .So I was surfing youtube and came a crossed George Motz's perfect patty malt. It looked simple and easy to make with only 4-5 ingredients. O.M.G.!!!! how can something this simple be this delicious!!! It was like a french dip sandwich but through some strange alchemy and BOOM you ended up with a burger. I've never had a burger this tender and juicy before. I now know why he can't stop thinking about it now I have the same problem to!

    He gives huge lifeguard vibes. The hair style, the aviator glasses he uses in some episodes...now that he tolds us about he being a lifeguard it actually makes sense.

    suggestions: 1. make longer episodes - 10-15 mins 2. interview / chat with people about their experiences with those burgers 3. dive deeper into the origins of those burgers - what inspired those creators 4. try making your own spin on those existing burgers - something that could improve them 5. more of George's road trips! 6. discover burgers across the globe, most of them are not called 'burgers' but they have different local names guys give them more suggestions so they could turn this into a whole series!

    While these are good suggestions and I agree with them, this will take a lot of time and money akin to an actual television program which, FWF may be able to do but they definitely wont come out every 2 weeks, more like 2 months

    Honda Civic Yeah, The Burger Show basically did something like this (with Motz too), but with covid you cant travel as much so Motz is just doing that kind of infotainment at home. Also, if youre looking for that kind of content Motz did a small tv series similar to what you described

    It’s all about the Patty Melt. The secret is in the Monterrey Jack cheese with glazed onions and finely chopped jalapeños. Add Bacon and you’ll be in heaven.

    I kinda envy that in a way, getting to grow up near the beach like that. I grew up in the South, smaller size town with nothing special going on. Always an indoor person so this kind of stuff never interested me much. Growing up and getting to travel like I have, living up in the mountains for a change and just gaining a real appreciation for nature, just getting to see the beautiful ocean and the like. That's the stuff to live for. So much amazing stuff out there just waiting to be seen. Side note: That patty melt looked absolutely incredible. Loving these videos!

    I lived for a while in Meriden, CT where there was a local specialty called a Steamed Cheeseburger. It was, and I do not use this word lightly, an abomination.

    I made this and my son has been talking about it for the last year! He just turned 10 and he asks me to make if all the time. It was literally the best I’ve ever had so it really blew his mind. I don’t make em often cause they are a bit heavy, but when I do my son thinks I’m the burger god
