What are the burgers that influenced Burger Scholar George Motz? To answer that question, we have to head to his hometown region of Long Island, New York. In the season finale of The Burger Show, George Motz shows Alvin Cailan how to make 3 hyper-regional burgers that he grew up loving: the Chamby (a hamburger topped with ham), the Chester (a grilled cheese with a patty in the middle), and the Crispy Fried Onion Burger. FINALLY MORE MOTZZZZZ!!! He is the single best host y’all have ever had. Dare I say he’s even better than the OG Action Bronson fuck that’s delicious…..plz plz plz bring back more Motz…a Motz a day keeps the doctor away!
The Chester is reminiscent of the Friendly's (New England / Mid-Atlantic ice cream restaurant chain) Big Beef Cheeseburger, still available in the few remaining restaurants that are open. That was my favorite Friendly's meal as a kid: Big Beef Cheeseburger (on butter-grilled white bread), crinkle-cut fries and a Junior Chocolate Fribble milkshake.
Aside from Sean Evans, George is First We Feast's MVP. Protect him at all costs

There's a cheeseburger in the El Paso/Juarez region that has ham, a hot dog, and salsa verde; sometimes a thin slice of steak is added, called milanesa . I would love to see an episode on it l.

A patty melt is a grilled cheeseburger with grilled onions... this is not that.
This was a walk down memory lane for me -- I grew up on the south fork of Long Island, so hearing Eastport, Quogue & Westhampton Beach brought a smile to my face, as did seeing the Triangle Pub and the Chester!
I let out a sigh of relief and whispered "Ah, finally" to myself after seeing George Motz in the thumbnail.
I love watching these while eating actual burgers...although the ones I cook at home tend to reflect my own "regional favorite" from my hometown of Wakefield, Massachusetts...that is, the minimally-adorned double quarter pound patties, two slices of white American, and Super Beef sauce (or, now that I live in Seattle, BBQ sauce, and no, they're not the same thing.) There's a beautiful purity to it.
George lost it on the last burger 🤣 almost burnt his place down

@@sammygg21 I'm not sure if that burner was electric or gas, but I've lit oil on fire before with an electric stove. You don't need a flame, just enough heat.
Good lord, I thought I was about to watch the last Burger Show to ever be filmed in George's apartment!

I've been kind of making a Chester up here in Ontario . 1/4 lb ground sirloin with marble cheese on the bottom slice and velveeta on the top one . Sirloin burgers are a staple for me, just love them .

Grew up in the same neck of the woods as George. Always love when he mentions my old haunts! George needs to recreate the Cheese Dream from The Good Steer in Centereach Long Island!
That Chester, if you add mayo and diced raw onions under the cheese, reminds me of Friendly's patty melt from Long Island.

The minute I saw what these burgers were going to be about, I was like, 'Oh yeah, this is why I love George Motz. Show me how to incorporate cheap sliced ham into a burger and make it awesome. Show me how to make a great burger with cheap sliced bread.' Seriously, I love this stuff. Keep it coming.
Can't go wrong with The Chester! Simple, cheap, easy, delicious. Like a humbled patty melt, if you will. Stellar video as always, we love seeing George Motz pop up on our subscriptions!

Yeah just don't make a big deal out of it. "Oh, this life-changing burger is from my home town!". Dude, it's from *everybody's* home town. Who the heck has never substituted sliced bread for a burger bun? It's not some kind of culinary breakthrough.

Been making the Chester my whole life.
I've been making my own type of Chester burger for several years now it seems. I was high, wanted a burger but also wanted a grilled cheese. Decided to make both, but instead my burgerwas two separate grilled cheese sandwiches, with the burger inbetween. The next day, while not high, I realized I could just make a grilled cheese and add a burger patty to it instead of two grilled cheeses and remembered that for a later time. Pretty damn good sandwiches.
I've made versions of all three of times. Thanks for the video and Merry Christmas

All of them looks delicious but Crispy Fried Onion Burger is definitely my favorite!
Need to try and make your version of the “Thurmanator” from Thurman Cafe in Columbus Ohio. It’s a burger named after the Arnold Expo where guys would come in and ask for giant burgers. The Thurmanator is over 8k calories!! Even if you ask for well done the burgers are still juicy and delicious.

Little pubs in NZ still do the free food thing. Usually a specific time of night - my pub was 8pm - trays of food come out and anyone with a drink could eat for free. Little wee sliders, fries, wedges etc. basic finger food stuff.
Man, I didn’t know how much I needed this.

We did the Chester in college. Not knowing it existed already, we called it "the van coma" because our dining hall was named Van Houten, and if you ate more than two, you went back home and passed out.
This channel is one of my inspirations for how I make my burgers at home I just started air frying burgers recently and boy oh boy do they taste good

We made a Chester in college. But we didn’t know it had a name so we named it after the dude who made it. Ours was different though, we had a completed grilled cheese that we had to open up and then put the burger patty inside. It was great and made the nasty college burgers taste way better

Graduating class of '06! From Noter dáme, lol We also had dudes hussling the Chester burgers here too!! A guy named Marcus & his budds, only lived like 2 doors down from mines. It either smell't of Fineee delicious burgers Or Pot the next day xD *Never really could tell with these guys!* But they sure made time at the dorm fly by lol, good memories, goodtimes. Anyways something always interesting with those guys about. *Heres the Cake!* From their own freaking room!! Seem't like Every Thru's-Saturday they'd have folks lined up & round't the corner of the halls clutching 6 bucks jones'ing up & down 😂 For a basket meal! Here. They weren't called no Chester Burgers lmao they were dubbed ' Mark's burgers!!! & they came with Stake fries too Or chips sumdays! Pickle on the side too

Hey y'all! It's not much of a "regional delicacy" unless you include my house as a region, but at my place we mix low quality store-bought ground meat with Lipton Onion Soup Mix (because we're poor) and it adds a really nice flavor to the awful beef.

I grew up in Ohio eating a burger nearly identical to "The Chester". Only difference was ours had an onion slice on it.

The Chester isn’t dissimilar to what Friendly’s used to do with grilled cheese. It was known as a “set up” for the burger (I had a buddy that worked the grill). They pulled apart the grilled cheese and placed the burger in there. This was back in the early days when the Big Beef (medium rare) was very buttery special. A Big Beef medium rare on a rye set up was something that can only be dreamt of today.
The last burger looked incredibly undercooked, I knew they weren't going to show a cross section lol

That's the way I like it. I grew up raising our own beef, so no need to cook the meat to death. Now I have to get over cooked burgers :(
When I was a kid, I always thought a "double cheese burger" was just... double the amount of cheese, not literally two cheese burgers. 😳 It made sense as a kid...

I remember seeing this burger joint on a food show a while back. Said it was the oldest burger place in the us?? Had these vertical burners...slide in racks of burgers.....didn't allow customers to put condiments on inside the restaurant.....love it.....got to find that place.....say there the best burger in the world.

I use this show as a way to keep myself in shape. Whenever I get a craving, I watch an episode and I'm instantly nauseous from watching Calvin's face.
George Motz always puts a smile on my face.
The real positivity and laughter always brings me up.

Alvin acts like everything done to a burger is some sort of glorious innovation whereas George just teaches you about the history and tells you to try it for yourself.
