Excellent video- I’ve been practicing Asian cooking for over 20 years, and sometimes here in North Carolina it’s hard to find everything I need. Now, by ordering online- and with your help- it is so much easier to get what I’m looking for! Thank you!

I am not Asian but I love Asian food and often make an attempt at cooking. When I went to the soy sauce aisle at my local "99 Ranch Market", my head nearly Exploded! Many are written in Chinese Only, lots of choice (too many). This video was just what I needed. Thanks for very informative video!

Great explanation of the soy sauce. Kikkoman’s Tamari soy sauce is eaten primarily sashimi (raw fish and seafood and sushi.). Kikkoman makes a good ordinary soy sauce, but avoid the Kikkoman manufactured in Wisconsin, USA. We usually purchase the imported Kikkoman or Yamasa from Japan. Both taste better. I think it is the water. My father was a professor of microbiology and studied the fermentation processes for soy sauce, miso, Sake, and Natto. That is how I got interested in Japan. I’m glad to know the brands that you like for Chinese Food products. Helps me to broaden my taste preferences and knowledge. Thank you!!!

@@FlyingChopsticks: While I personal dislike natto, both my son and wife who were born in Japan love Natto a lot. One of the brands we purchase is Kibun 記文. It comes in a packet of 3 mini (one serving) of Natto together with the sauce and Karashi mustard. The package has red and white checkers on it. The white mostly comes from the clear plastic covering the white packets. If you need a photograph, how may I send one to you?

@@FlyingChopsticks : I’m the only one in the family who doesn’t like Natto. My son and his mother love it. My wife likes the Japanese brand Kibun which cones with sauce and Karashi mustard.

I tried Kikkoman regular soy sauce against Pearl River bridge super light soy sauce. They tasted similar except Pearl river bridge soy sauce had stronger umami taste. I would use Kikkoman for serving sushi and as seasoning after cooking. Pearl river bridge for cooking.

Many food has preservatives and food colouring nowadays just that lee kam Kee is more natural (depends on which product though)

Thanks for the information. I now know that Tamari = Light Soy Sauce. Japan has different categories depending on Wheat to Soybean Ratio. Normal is 5/5 Tamari is 1/9 or 0/10 for example

no. dark soy sauce has more sugar compared with light soy sauce but it is not sweet. it is still salty.

I find it ironic that so many western people will demonize soy products but yet they will readily embrace and talk about how much they love soy sauce. Soy sauce is a key component to most Chinese dishes, not all but many. Soy in fact is consumed pretty much daily in China. It’s not meant to be eaten as a condiment it’s pretty much for stir frying dishes and soups. If all these supposed open minded individuals would travel just once to China they would know this.
